Best Carrot Cake Ever

Moist and Delicious! I made just 1/2 the recipe and baked it in a 9x13 pan for 25 minutes. It was so moist and delicous. Three days later it is still awesome. I topped it with a Cream Cheese Frosting made with 1/2 cup butter, 1 pkg. cream cheese, 2 cups powdered sugar and 2 tsp. vanilla extract.

Sesame Green Beans

Molasses Sugar Cookies

Very good! My first pan of cookies were a little too small (was trying to get LOTS) and I baked them a little too long so they came out crisp. The next pan I made them larger and took a minute off the baking time and they were excellent. Out of personal preference I will probably add a little more ginger next time. This recipe is definitely a keeper!

Supreme Strawberry Topping

YUM! Was wonderful on crepes and Dutch babies. The vanilla is such a nice touch. I have used the basic recipe to make toppings with blueberries, blackberries and raspberries. All have turned out yummy. (For the blackberries I mashed them and removed some of the seeds.)

Strawberry Spinach Salad I

Very good. I used red wine vinegar mixed with distilled white vinegar because those are what I had on hand. I added strips of BBQ chicken breast for an excellent dinner salad.

Tex Mex Meatloaf

Big Germans

YUM YUM YUM!!! This is a definite keeper! The whole family loved them. I baked it in 2 pie tins. I found that unsalted butter works best because it doesn't turn brown when it's melting at that high temperature. I've also substituted margarine when I didn't have butter on hand. And lastly, I've cut down to 2 Tbsp. butter/margarine per pie tin (total of 4 Tbsp. for the recipe.) If fresh strawberries aren't available, try making the Supreme Strawberry Topping using frozen strawberries (recipe found on this web site)

BBQ Dry Rub

Very delicious! I was kind of rushed so I parboiled the country style ribs for 10 minutes, let them cool slightly and then rubbed them. I let them sit on the counter for about 10 minutes and then grilled them for about 10 minutes to finish them off. They were tasty and tender. Next time I will probably try to use the rub as intended.

Cola Pot Roast II

Delicious! I put it all in the crockpot in the morning. Baked some potatoes and dinner was ready! The gravy turns out really yummy and it's so nice not to have to try to thicken a gravy at the last minute.

Southwestern Style Chalupas

The whole family really liked this. I was in a "rush" so I used canned pinto beans and I cut the pork up before putting it in the crock pot. I also cooked it on high to speed things along. I added about 1/4 cup chopped onions and a teaspoon or so of garlic powder. I have two young children so I didn't add extra spices as some have suggested. Both kids really liked dinner tonight. I served the meat in home made fry bread with lettuce, tomatoes, olives, cheese, sour cream and onions. It was fantastic. A keeper for sure!

Cinnamon-Roasted Almonds

These are so delicious! And so simple to make. I followed some of the suggestions and I used 1 tsp. cinnamon and I also added 1/2 cup brown sugar. They are very similar to some that we get at the Holiday Food & Craft Fair and also at the Scandinavian Festival. These will make great gifts, if I don't eat them all first.

Chocolate Mint Cookies I

These were delicious! They were a hit at Christmas. I added 1 tsp. vanilla to the butter mixture. I found that I had to bake 12 minutes on my baking stones. I didn't have the Andes mints on hand, so I used 1 thin mint (by Necco) on each cookie. After they were completely cooled, I melted white chocolate and put it into a parchment bag and drizzled it over the tops. They were very pretty as well as tasty! They disappeared quickly. I will definitely be making these again.

Spicy Grilled Chicken

This was very tasty. I didn't have breasts on hand so I did thighs and legs. I removed the skin from the thighs before marinating. I baked the chicken for about 1/2 hour at 350 and then grilled it to finish it off. It was very moist and delicious. I'll definitely use this recipe again.

Exquisite Pizza Sauce

This was delicious. I made a few modifications and I think that next time I will try it with just 1 Tbsp. honey. I used 1/2 tsp. garlic powder because I was feeling lazy and didn't want to mince the fresh. I added an extra 1/8 tsp. basil and oregano. (I also put fresh basil on the pizza) I didn't have anchovy paste. Left out the red pepper flakes and salt. I will save this as my standard pizza sauce!

Quick and Easy Alfredo Sauce

This sauce was simple AND delicious. I actually made it as a base for my spinach and artichoke heart pizza this evening. I have leftovers to serve over homemade spinach noodles. I used fresh minced garlic. Whisking constantly helped the cheeses to melt well and it turned out very smooth. I cut the butter down by half. As others say, it makes a LOT!

Asian Beef Skewers

Wonderful. My husband raved about them. I used Petite Sirloin (it was more affordable)in place of the flank steak and it was very tender and easy to eat. I think I will use more garlic next time and possibly some red pepper flakes too. I served the skewers with Sesame Green Beans, sticky rice and Caravelle brand Sweet Chili Sauce which I buy at an Asian market. If you use bamboo skewers, don't forget to soak them in water for a couple hours. I was rushing things and didn't soak them long enough, so the tips caught fire on the grill.

Best of the Best Blueberry Muffins

Delicious! And easy too. Blue Ribbon winner at our county fair. After making them for family and friends and getting lots of compliments, I entered them in the fair, where they got 1st prize and a bonus too. I do cut the sugar down to 1 cup and they are still plenty sweet. I am fortunate to live in an area that has big, delicious blueberries.

Breakfast Sausage Casserole

This was a really easy and yummy dish for our Easter brunch. I made a few changes to the recipe. I added a small can of diced green chilis. I sauteed some onion with the sausage. I substituted 12 oz. of 2% milk for 1 can evaporated. I also used only 1/2 the amount of cheese called for. It was really delicious.
