Green Sauce Enchiladas

Irish Potato Casserole

I watch my fat intake, so cut the butter to about 2 Tbsp. It was still plenty buttery! I also added a little extra onion. These were great and brought compliments from the family.

Judy's Strawberry Pretzel Salad

This salad is so awesome! My sister-in-law has been making it for holidays and this is the ONE food that I look forward to every Thanksgiving and Christmas. I made it last year for my family and they loved it too.

Rainbow Cookies

Fun to make! To make sure I got even portions of dough, I weighed the whole batch and then divided it into 10 parts. When it was time to roll the dough out, I cut pices of paper for patterns. I put the paper under wax paper and then rolled the dough to cover the paper. These were much easier to make than I had imagined.

Fun to make! To make sure I got even portions of dough, I weighed the whole batch and then divided it into 10 parts. When it was time to roll the dough out, I cut pices of paper for patterns. I put the paper under wax paper and then rolled the dough to cover the paper. I put the log of dough in the freezer to hasten chilling. Then I cut them into slices and then cut the slices in half. I thought this was easier than trying to cut the log in half before slicing. These were much easier to make than I had imagined.

South of The Border Chicken Soup

My family really likes this soup. I make it in the crock pot, so I use fresh carrots and potatoes for vegetables. It's easy and so delicious!

Cinnamon Rolls I

These were great! I didn't have ice cream on hand, so used whipping cream and white sugar as someone else had suggested. I also didn't have milk powder, so just used warm 2% milk. I did add 2-3 Tbsp. flour. (I live in a very moist climate and often have to add a little extra flour.) The dough was still real tender, but that took away the stickiness. I didn't have any trouble working with the dough. I only used 1/4 cup butter spread on the dough, and that seemed like plenty. I also put in some extra cinnamon because we love it! I made the dough up on Christmas Eve, left them in the fridge until Christmas morning and we had hot rolls for breakfast. Delicious! 8 year old son hopes I make them every year for Christmas morning. Made another batch the 27th as a gift for a neighbor.

Prime Rib

Excellent! I put the roast out on the counter for 1 hour before putting it into the oven. (I cleaned the oven first.) 12# roast, I cooked 70 min. and turned it off. It was so good. Everybody loved it. I liked that this one was roasted with a cover. In the past I had done Prime Rib in an open roasting pan (as per other recipes) and my oven was always a MESS afterwards and it was always so smokey. I dind't have a bit of problem with smoke. I'll definitely do this again.

Best of the Best Blueberry Muffins

Delicious! And easy too. Blue Ribbon winner at our county fair. After making them for family and friends and getting lots of compliments, I entered them in the fair, where they got 1st prize and a bonus too. I do cut the sugar down to 1 cup and they are still plenty sweet. I am fortunate to live in an area that has big, delicious blueberries.

Cherry Angel Food Cake

Delicious! I don't know if mine turned out just as it "should", it was not real tall and fluffy. It didn't end up filling up the pan, but it had GREAT flavor. I iced it with whipped cream, sweetened with powdered sugar and flavored with vanilla and some chopped cherries. I later compared the recipe to the one in my Betty Crocker book and noted that there are less eggs in this recipe among other things, which might explain why it wasn't real tall and fluffy. I will try it again for another occasion.

Breakfast Sausage Casserole

This was a really easy and yummy dish for our Easter brunch. I made a few changes to the recipe. I added a small can of diced green chilis. I sauteed some onion with the sausage. I substituted 12 oz. of 2% milk for 1 can evaporated. I also used only 1/2 the amount of cheese called for. It was really delicious.

Mendocino Chicken Salad

DELICIOUS!! The supermarket didn't have smoked chicken so I substituted smoked turkey breast. I toasted my almonds before adding them to the mix. I added a few sprinkles of black pepper. I fixed it the night before our picnic to let the flavors blend. It was wonderful. We had it on croissants and in wraps at the picnic. The next day I had it on a cheese bagel. Tastes good any way you eat it.

Best Carrot Cake Ever

Moist and Delicious! I made just 1/2 the recipe and baked it in a 9x13 pan for 25 minutes. It was so moist and delicous. Three days later it is still awesome. I topped it with a Cream Cheese Frosting made with 1/2 cup butter, 1 pkg. cream cheese, 2 cups powdered sugar and 2 tsp. vanilla extract.
