Mimi's Smoked Salmon Chowder

In my opinion the herbs took over the flavor of the salmon. And that was AFTER I cut the tarragon and thyme to 1/2 teaspoon each. I will probably give it another try and use even less herb. I just want to taste the salmon more. The consistency was good and I liked that it didn't have a lot of cream in it. The half and half was just right.

Molasses Sugar Cookies

Very good! My first pan of cookies were a little too small (was trying to get LOTS) and I baked them a little too long so they came out crisp. The next pan I made them larger and took a minute off the baking time and they were excellent. Out of personal preference I will probably add a little more ginger next time. This recipe is definitely a keeper!

Indian Curried Barley Pilaf

I wish I had read some reviews before making it but I was in a rush and wanted something new. Instinct told me that the amount of curry wasn't going to be enough so I doubled it. I still thought it was on the bland side. I plan to add garlic and increase the turmeric and pepper and will probably quadruple the curry powder. I liked the texture and it is a good way to add a healthful grain to the diet.

Quick and Easy Alfredo Sauce

This sauce was simple AND delicious. I actually made it as a base for my spinach and artichoke heart pizza this evening. I have leftovers to serve over homemade spinach noodles. I used fresh minced garlic. Whisking constantly helped the cheeses to melt well and it turned out very smooth. I cut the butter down by half. As others say, it makes a LOT!

Chilled Blueberry Soup

My 8 year old son was reading this morning. He suddenly blurted out, "Blueberry soup?" I told him that yes, there are soups made from fruit. He suggested that I look on allrecipes.com to get a recipe, not doubting that there would be one here. I made a few modifications as follows: I cut the sugar down to 3/8 cup and doubled the blueberries because I thought the orange flavor totally overpowered the blueberries. I didn't really like the idea of chunks of blueberries in the liquid, so I pureed it. Then I didn't really like the skins so I strained it. Very delicious and very colorful!

Exquisite Pizza Sauce

This was delicious. I made a few modifications and I think that next time I will try it with just 1 Tbsp. honey. I used 1/2 tsp. garlic powder because I was feeling lazy and didn't want to mince the fresh. I added an extra 1/8 tsp. basil and oregano. (I also put fresh basil on the pizza) I didn't have anchovy paste. Left out the red pepper flakes and salt. I will save this as my standard pizza sauce!

Spicy Grilled Chicken

This was very tasty. I didn't have breasts on hand so I did thighs and legs. I removed the skin from the thighs before marinating. I baked the chicken for about 1/2 hour at 350 and then grilled it to finish it off. It was very moist and delicious. I'll definitely use this recipe again.

Alcohol-Free Mint Julep

Very yummy! Easy too. I had to make a second batch of the syrup later in the day because I liked it so much. I also tried it with Limeaid and I loved it that way. It's a very refreshing drink and I am sure I will enjoy them throughout the summer.

Chocolate Mint Cookies I

These were delicious! They were a hit at Christmas. I added 1 tsp. vanilla to the butter mixture. I found that I had to bake 12 minutes on my baking stones. I didn't have the Andes mints on hand, so I used 1 thin mint (by Necco) on each cookie. After they were completely cooled, I melted white chocolate and put it into a parchment bag and drizzled it over the tops. They were very pretty as well as tasty! They disappeared quickly. I will definitely be making these again.

Cinnamon-Roasted Almonds

These are so delicious! And so simple to make. I followed some of the suggestions and I used 1 tsp. cinnamon and I also added 1/2 cup brown sugar. They are very similar to some that we get at the Holiday Food & Craft Fair and also at the Scandinavian Festival. These will make great gifts, if I don't eat them all first.

Grandma's Corn Pudding

This wasn't what I was looking for. It was a little to "eggy" for me. Kind of like a corn quiche. I had some corn pudding at a party the other evening and it was more firm and didn't have so much egg taste. I'll keep looking. This wasn't bad, just not what I wanted. I'll see how the left overs taste tomorrow.

Cinnamon Corn

Tasty. Reminded me of something to serve for Thanksgiving or Christmas dinner. I cut back the sugar and it was still quite sweet. For the topping I put just a teaspoon of sugar and 1/2 teaspoon of cinnamon and that seemed like plenty. My 3 year old really liked it!

Southwestern Style Chalupas

The whole family really liked this. I was in a "rush" so I used canned pinto beans and I cut the pork up before putting it in the crock pot. I also cooked it on high to speed things along. I added about 1/4 cup chopped onions and a teaspoon or so of garlic powder. I have two young children so I didn't add extra spices as some have suggested. Both kids really liked dinner tonight. I served the meat in home made fry bread with lettuce, tomatoes, olives, cheese, sour cream and onions. It was fantastic. A keeper for sure!

Asian Beef Skewers

Wonderful. My husband raved about them. I used Petite Sirloin (it was more affordable)in place of the flank steak and it was very tender and easy to eat. I think I will use more garlic next time and possibly some red pepper flakes too. I served the skewers with Sesame Green Beans, sticky rice and Caravelle brand Sweet Chili Sauce which I buy at an Asian market. If you use bamboo skewers, don't forget to soak them in water for a couple hours. I was rushing things and didn't soak them long enough, so the tips caught fire on the grill.

Cola Pot Roast II

Delicious! I put it all in the crockpot in the morning. Baked some potatoes and dinner was ready! The gravy turns out really yummy and it's so nice not to have to try to thicken a gravy at the last minute.

Frogmore Stew

This was really good. It was a unique combination. Very easy to make. I added carrots along with the potatoes and onion with the corn. Both of my boys (9 & 3) tried it and ate a variety of pieces. Hubby said he'd like it again, so this is another keeper!

BBQ Dry Rub

Very delicious! I was kind of rushed so I parboiled the country style ribs for 10 minutes, let them cool slightly and then rubbed them. I let them sit on the counter for about 10 minutes and then grilled them for about 10 minutes to finish them off. They were tasty and tender. Next time I will probably try to use the rub as intended.
