Super-Good Oatmeal

Strangely addictive. I did not think I would like it that much and perhaps have to force myself to eat it at least once a week. WRONG. I eat this stuff nearly everyday and sometimes twice a day - especially before a long workout. Something about the thick warm oatmeal with all those other good things is just comforting... strange I know. All in all, good stuff and a new staple in my diet. Thanks

Asian Roll Lettuce Wrap

Wonderfully simple and delicious. Only change that I made was substituting Chard in place of regular lettuce (more flavor and nutrition). Great recipe - thanks.

Becca's Custom Turkey Shepherd's Pie

I was shocked at how good this recipe is. I did make a few changes which include sauteing sweet onions, garlic and pepper and added this mixture to the ingredient list. I will say it again, I was shocked at how good this recipe is. I had to freeze the second pie to save my husband from a food induced coma. Definitely a permanent part of the rotation.

Best Yet Turkey Chili

Surprisingly good considering the simplicity of the ingredients. Husband really liked it, another plus. I will strongly recommend that one wait until the last few minutes of cook time to add the spices. Most of us use not so fresh grocery store spices which have already lost much of their flavor and aroma. Hence, adding them at the beginning will cook off what little flavor is left. Add the spices in stages if desired and depending on how long you plan on simmering the chili.

Spinach Lentil Soup

With a few additions and substitutions this soup came out great. I added zucchini, yellow squash, and a 14 oz can of diced tomato. Additionally, I used kale instead of spinach as it holds up better in my opinion. I too flipped the water / broth using 6 cups of chicken stock (not broth) and 2 cups of water. I also added a generous helping of garlic, a dash of cumin, and two fresh bay leaves. One reviewer stated that the soup is bland, perhaps he or she did not allow the soup to really cook down thus developing flavor. Honestly, 25 minutes was not nearly enough time for the ingredients to mesh and for the flavor to develop. It took me nearly 50 minutes, and having said this next time I will wait to add the zucchini, squash, and kale until the last 15 minutes as it got a bit softer than I prefer. Moreover, do add salt and pepper to taste, not sure why it was left out on the recipe but it is surely necessary. I added uncooked rice and F renchlentils and the 50 minute cook time was perfect. This is a healthy and low calorie soup that fit my nutrition plan perfectly.

Thai Curry Tofu

This is a delicious dish for those who enjoy curry. The creamy texture coupled with the mild curry flavor compliment one another beautifully. I followed the suggestion of other reviewers and added cauliflower, peas, and carrots. The snap of the peas was a nice addition to the creaminess, and the sweetness of the carrots blended well with the curry flavor. The cauliflower added some "bulk". Honestly, this recipe would not be as good without the "veg", in my humble opinion. I also added chili flakes while preparing the tofu, and doing so added some heat and kick to the tofu. All in all, if you like curry and tofu, this is great dish.
