Basic Corn Muffins

I just made these and the one I ate hot from the oven, with butter, was delicious and moist. (I mixed the egg, oil and milk together before adding to the dry because I'm used to doing it this way and I know it works.) They only needed 18 mins. in my oven. I usually use the recipe on the cornmeal bag but didn't have one this time. This recipe is simpler and the results are just as good. Thank you!

Spinach and Feta Pita Bake

I made it with homemade pizza crust because I didn't have any pita. The best thing for me is finding out about sundried tomato pesto...it's fantastic. This will be a recipe I will keep and make with different variations that people have suggested and as is. I will probably throw red pepper flakes on it next time because we like a little heat. Thanks for a fabulous recipe.

Curried Coconut Chicken

This dish turned out DELICIOUS but was so mild that I added ANOTHER 4 tbsp. of curry powder. I substituted diced potatoes, cauliflower, carrots and frozen peas for the chicken, and left out the sugar. I followed the recipe exactly except because I didn't use chicken, I tossed the raw veggies (except peas) into the sauce and simmered for about 90 mins. I threw the frozen peas in for the last 10 mins. and served over basmati rice. Next time I will cook the veggies before adding to the sauce because even after 90 mins. they still were not quite soft enough. I'm looking forward to making this with chicken when my vegetarian isn't home.

Pasta Pizzaz

Very mildly flavoured dish as is. I added quite a few red pepper flakes but this dish needs way more flavour. I will try it again with additions such as sundried tomatoes. A good starting point.

Harvest Salad

I made this for my Christmas buffet table and it was attractive and very good as written. I couldn't find walnut oil so I substituted with olive oil and it was very good. I switched the blue cheese (which we dislike) for cubed feta (served on the side) because sadly our new daughter-in-law hates cheese. I was hoping for a Christmas miracle that the leftovers would be edible but of course they weren't but this is to be expected of a dressed salad.

Easy Batter Fruit Cobbler

Tasted great however the butter burned black on the bottom of my pan so I had to scrape the batter and fruit off to serve it and leave the burned layer in the pan. I wondered at the time what would happen when I poured the batter into the pool of melted butter. I tried to stir the melted butter into the batter as much as possible. It could also be because I baked it in my toaster oven. Next time, and there will be a next time, I'll cook it on the oven.

Shrimp Stir-Fry

Once on the plate I had to add more of all seasonings plus red pepper flakes to give it flavour because it was VERY bland. Will double all seasonings next time and see how that is however I anticipate even tripling the seasonings. Then I think it'll be a good recipe.

Herbed Mushrooms with White Wine

This was quick, easy and delicious and a nice savoury dish for my vegetarian son. Those of us who like mushrooms, loved it. I made one change and that was to use about a tsp. of chopped garlic from a jar instead of mincing my fresh garlic because I was juggling many dishes and wanted the short cut. I'd do that again next time.

Fudgy Brownies II

Like other people, I used chocolate chips (semi-sweet), decreased the sugar by 1/2 a cup, and didn't bake them as long as recommended because I really wanted them to be moist. They came out strangely light brown in colour and very dry. I had to mix up a thin icing at the last minute just to try to improve them a little. I'll try it once again exactly as written because I always find it annoying when people mess with the ingredients and then complain. But I caution you not to substitute as I did because I was very embarrassed to offer them up on my treat day today. Thank heavens they weren't my only offering.

Quick Creamy Chicken and Noodles

Having read others' reviews, I set about to make this dish tastier so I added diced green pepper and peas. I used leftover honey and garlic chicken breasts which were very flavourful on their own and was very surprised when the resulting dish ended up very bland anyway. I'll try it again with Cream of Chicken soup and add a lot of onion and hopefully it will be better. Seems like a good basic dish and it must be possible to jazz it up a little.

Creamy Au Gratin Potatoes

I made this as directed except took the other users' advice and sliced the potatoes very thinly, and also diced the onions first. It cooked perfectly in 1 hour so I had to keep it warm for half an hour and then broiled the top to give it a nice golden brown colour. Making it again in a couple of days for Easter.

Beef Stew VI

Just finished eating this stew. Knowing others thought it was too thin, I added twice as much cornstarch and it was still very thin and bland. So, I squirted in some ketchup and some Worcestershire and salt (we eat low salt but this needed it). To thicken it I put in two packets of turkey gravy powder with the smallest amount of water possible. That thickened it and it tasted really pretty good. I'll make it again but take more advice from these ratings first. A good base.

Best Spanish Rice

Really good simple and tasty rice dish that some of us put in tacos and others eat alongside tacos. The rice/liquid ratio is incorrect. I believe the recipe should read 3 cups of chicken broth (or vegetable broth in my case since one of us is a vegetarian).

Shrimp and Quinoa

Liked this recipe very much and tried to follow it exactly except omitted mushrooms (which my husband doesn't like) and doubled the asparagus. I tasted it first and then doubled the raisins and sprinkled in quite a bit of cayenne pepper. Next time I'll sautee the onions and peppers in garlic as others have suggested and it would be great with chicken too.

Loved them.....1 min. boiling the mixture wasn't nearly long enough to set them so we had to freeze and eat....next time I'll boil for at least 3 mins. and see how they work out. Well worth making!

Yellow Dhal - Sweet Potato Soup

I doubled the recipe, added more turmeric, used fewer jalapeno peppers because I was afraid they'd add too much heat. Turned out really bland. I tossed in a bunch of garlic in oil from a jar and quite a lot of cinnamon--better but still bland. I felt I had to save this large amount of dhal so I dumped in maybe 1/4 cup of curry powder and it was edible but not really flavourful. We all ate it but won't make it again--looking for a more flavourful recipe or else maybe I'll use some adjustments from others' recipes.
