Overnight Blueberry French Toast

OMG this was delicious! Made this for breakfast on Xmas morning. Made some slight changes based on others feedback. Used Italian bread for this. Softened 1 bar of cream cheese in the micro and mixed with 1/4c of powdered sugar, vanilla extract, cinnamon, nutmeg, & cloves and spread on first layer of bread. Will up the cream cheese next time! Used 1-1/2c frozen blueberries and topped with rest of bread. Used 10 eggs and added 1/2c white sugar instead of the syrup. Added some extra cinnamon and nutmeg to the mix. Let sit overnight and popped in the oven for about 1 hour and 15mins at 350. Didn't have time to let it come to room temp before baking so added a few mins to overall cooking time to make sure it was cooked all the way. For the syrup, used 1-1/2 c frozen blueberries and lemon zest and juice from 1 lemon. Add lemon to this it made such a difference! also added a splash of vanilla extract. My hubby who isn't fond of sweets went back for seconds. Its warm and gooey and very comforting. Will definitely make again. Maybe try cherries next time. YUMMY!

Margarita On The Rocks

Amazing! Tasted just like our fav marg from the chain restaurant we often visit. The only thing I did different was add a equal packet to some fresh squeezed lime juice instead of using the sweetend lime juice from the bottle you get at the store. Seemed kind of silly not to just use fresh. Very yummy!! We were drinking these all Cinco De Mayo weekend!!!

Coconut Margarita

This was just ok. I feel as if it was missing something. I ended up adding more tequila (suaza silver) and more sour mix. Don't think I'd make this again.

Baked Corn

This was really good. I took others advise and added the water from the canned corn, cut buter to 1/2c, increased sour cream to 1 c. Also just realized recipe called for 2 eggs but I only used 1, oops! It was very good. Served with chili.

Easy Cheese and Ham Scalloped Potatoes

These potatoes were very good! I used a 5lb bag of yukon golds, 2 med onions, 5 garlic cloves, 12oz package of diced ham, 1 pint of heavy cream & 1/2c of half and half. I was afraid it would be too watery so I cooked off the onion/ham/garlic mixture before adding to potatoes. Also, even with reducing the liquid by almost half I still felt the sauce was too thin for my liking. I ended up mixing in a cornstarch/water slurry to thicken it up. It turned out fantastic. Served with grilled chicken and steamed broccoli.

Slow Cooker Latin Chicken

Fan-freaking-tastic! This was soooo goood! I used boneless skinless thighs, 1 can black beans, 1 can corn, 1 chopped onion, and 5 or 6 cloves of garlic. Also used a few bay leaves for good measure. I ended up using triple the cumin/allspice along with salt/pepper. Skipped the browning process as it was totally unneccessary. I was going to skip the sweet potatoes but after reading the others reviews saying it was a must I went ahead with it. I'm glad I did! Also, doubled the liquid by using 16oz jar of medium salsa, & 1-1/2c chicken broth. Cooked on high for 5 hours and thicked with a bit of cornstarch at the end. Served with white rice. Delicious! Used the leftover mixture and made burritoes the next day. Heaven!

Authentic Louisiana Red Beans and Rice

This was fantastic! I modified the seasonings a tad. Didn't use cayenne, thyme or sage. Doubled up on the cajun seasoning, added garlic & onion powder. This dish needs salt so added towards the end. Threw in 2 smoked ham hocks for good measure and used 5cups chicken stock instead of plain water. Let is simmer for 2.5 hours and mashed some of the beans which thicked up the sauce. DELISH!!! served with white rice, corn muffins (Jiffy brand & added corn kernals & sharp chedder to mix) and steamed broccoli. Served with a bottle of Tasco on the side. Hubby asked me to make again half way through the meal. It's a keeper!

Chocolate Chip Cookies I

This was fantastic! I did have to alter the recipe only because I had to make due with what I had on hand. No shortening so I used same amount of butter, no baking soda so doubled amount of baking powder, I used dark chocolate chips since I didn't have milk, and no nuts so I used same amount of dried cranberries. Fantastic! something about the dark chocolate & cranberries that just made this for me. Great recipe will make again!

Pasta e Fagioli a la Chez Ivano

Fantastic! I scaled the recipe down to half. I forgot to add celery but didn't even miss. I cooked the pasta seperately till al dente and threw it in at the end. I ended up using more beef broth than required but I was looking more for a soupy result. So good!!! Will make again. Was skeptical on adding a whole jar of garlic but glad I did. Definitely a keeper!

Award Winning Peaches and Cream Pie

Served this as one of 2 deserts for thanksgiving. Added fresh raspberries to the top. Didn't care for it at all. Only a couple of people ate and we didn't eat the rest. Will not make again.

Fresh Southern Peach Cobbler

This recipe was so-so for me. I used 6 ripe peaches, and about a cup of bing cherries that I wanted to use up before they went bad. I used splenda baking sure instead of the white and added some chopped pecans to the batter. I think I would have enjoyed this more if it was all cherry. Guess I'm not a peach fan after all. Hubby liked it and he eventhough he hates sweets. Will try again but with all cherry or possibly berries.

Great Garlic Bread

Great, easy, tasty recipe! I added a few roasted garlic cloves that I mashed into a paste and mixed in with the butter and some garlic powder to form a paste rather than melt the butter. Felt it was easier to spread on bread. Sprinkled grated fresh parma cheese then topped with the mozzarella cheese. YUMMY!

Grilled Romaine Salad

I am giving this 4 stars based just on the tomatoes and dressing alone. The actual grilled romaine lettuce was just okay but based on the end result I wouldn't bother with that step next time. The tomatoes were to die for! I threw in a few garlic cloves and ended up mashing them up for the "great garlic bread" recipe on this site. The dressing was really good too. I added the juice of 1 lemon as I felt it needed more acid to balance out the oil in the recipe. Very good overall.

Pesto Chicken Florentine

This was really good and very quick. I used a 15oz jar of Alfredo, 4oz jar of pesto, & frozen chopped spinach. We like our pasta saucy so I added 1c of the pasta water to thin out the sauce a bit. Also, used about 1/2 of the 4oz jar of pesto. I grilled chicken breast and served on the side and served sauce atop the pasta instead of combining beforehand. This tasted just like spinach artichoke dip!! Served with "Great Galic Bread" and "Grilled Romaine Salad" from this site.

Artichoke Pie

This was super! I used 2- 6oz cans of marinated chokes, plain bread crumbs because that's all I had but added some italian seasoning to make up for it. I upped the garlic to 4-5 cloves (we love it) and added sliced vine ripe tomatoes to the top but under the cheese layer. Also took others advise and used 1tbls of sour cream per each egg which I ended up using 4. Super easy and super delicious. Tasted even better the next day. Great eaten at room temp. Will be making it again soon!!

Slow Cooker Cassoulet

This was just awesome. I seasoned my chickent breast pieces with s/p & poultry seasoning before giving it a quick brown in a pan with a little olive oil. I threw everything else together in the crock pot substituting ckn broth for the wine, dried parsley for fresh, 5 garlic cloves (we love garlic :)and some dried marjoram, oregano, & a few bay leaves. Cooked on high for 5 hours. Served with some sour cream mashed potatoes and honey glazed carrots. We ate dinner in near silence as this was just so good! I'll try it w/wine next time and fresh herbs from the garden. Amazing!!!

Chicken and Bacon Shish Kabobs

This was absolutely awesome!!! I marinated the chicken overnight. Added green peppers, & 2 cloves of crushed garlic and forgot to marinate the mushrooms but it still came out great. I used regular cut bacon and didn't have a problem some had w/it being a bit on the raw side. THe chicken was juicy and so flavorful. I will be making these again next weekend. A huge hit!!!

Cowboy Casserole

Tried this out for dinner last night. It was good but I don't think it really qualifies as a main dish. This recipe is more like kicked up baked beans. Might make this as a side dish next time I grill out. I will also leave out the bacon. If I wasn't the one that added it to the pan I would have never known it was even in there. I will skip the added fat & calories next time by just leaving it out. Didn't change too much other than add worchester sauce, green/red peppers and topped off with some grated cheddar. It was ok but main dish worthy in my opinion.

Hot Artichoke and Spinach Dip II

Great recipe! I mixed the mozzarella cheese in w/the rest of the ingredients since I didn't want to have to try breaking through the cheesy layer once it cooled. Also, I used sour cream instead of mayo. Only thing I have to really comment on is I would have like it to be a bit thinner. My chips kept breaking in the dip while I was trying to scoop it up. Had to use a spoon. But that's more of a personal preference I guess. Next I'll use more sour cream or add the water the artichokes were packed in to loosen it up a bit.

Cheddar Ranch Dip

The concept for this recipe was good however the end result was just plain SALTY!! I used fat free sour cream and only 1/2 of the recommended 3oz jar of bacon bits. It was so salty we had to throw the whole thing out. What a waste of ingredients.
