Summer Delight Salad
I used fruit that was in season and that was fresh. If the fruit isn't ripe, the salad-treat won't taste very good. SO use melons, strawberries, grapes, blueberries, kiwi or anything fresh. I used a pineapple sorbet that worked just fine. My only change would be to use Sugar Free Jam. The Strawberry Preserves was a little too sweet for my liking, especially with the already sweet ice cream. I think even a fig jam that is mild might be really good as well... Don't forget fresh mint, it adds that extra punch!!! Its very easy especially for a large crowd and I would make it again!!!

Pumpkin Cake II
I followed the alterations that others had made and used the extra pumpkin in it as well. This cake is SUPER moist and loved by all. When creating the glaze you can make it thicker or thinner. I believe that creating a light glaze is the best so it will drizzle nicely over the cake. AWESOME RECIPE!!!

Baked Macaroni and Cheese I
This recipe was good.. I would have liked the sauce to be a little more creamier and less thick. But to give this recipe some EXTRA flavor I added: 1 additional glove of Garlic, 1/2 Tsp. Dijon Mustard, 1/2 Tsp. Cyane Pepper, 1/2 Tsp. Paprika and a couple shots of Worcestershire. Also for more flavor try different types of cheese. I used Mild White Cheddar and Monteray Jack Cheese. I also coverd for half the time so the cheese would be melted instead of extremely crispy! I would make this again!
