Enchilada Meatballs
this was awesome! made some changes - subbed ground turkey, added 1/2 packet of taco seasoning, and used all enchilada sauce (no tomato). cooked it in a baking dish and since i used turkey - there wasn't any grease, poured enchilada sauce on top and added cheese - popped it back in the oven for a couple minutes. served with a side of mexican rice and black beans :)

Green Slime Smoothie
i'm severely anemic throughout this pregnancy and my doc suggested that i eat more spinach and iron rich foods - this smoothie is just what i was needing with a splash of OJ to absorb the iron into my system :) you really can't taste the spinach. and since i don't have to cook the spinach i feel i'm drinking 100% of its nutrients!! thanks for the recipe janet ;)

Simple Roasted Chickpea Snack
so i just made these (twice). I used two cans of chickpeas, drained, rinsed, and COMPLETELY DRIED before lining cookie sheet with foil. Baked at 400 degrees, shaking every 10 mins (4 times). Some were crunchy, some were soft. so i bumped it up to 425, shaking 10 mins (2 more times) really watching because it was starting to brown. now they're crispy, crunchy, and awesome! (i also reseasoned half way thru)
