Savory Pork Stew

This was alright. A little bland, and the pork turned out pretty dry. My husband liked it, but I was not very impressed.

Seasoned Cornish Hens

Pretty good - I substituted Hoisin Sauce for Oyster since that's all I had on hand. I also upped the garlic to 4 cloves and marinaded the cut up hens overnight. It was way too hot to turn on the oven so I grilled these over medium indirect heat for about 30 minutes. The hens were very moist and had a nice mild flavor to them.

Crispy Edamame

A great snack or side dish. Just make sure to pat the edamame dry after thawing and try to spread them out in 1 layer in the pan so that they aren't overlapping. Doing these 2 things makes sure the edamame get nice and crispy.

Brunch Enchiladas

Absolutely delicious! The only thing I changed was to make extra egg batter so that the tops of the tortillas were covered (as suggested by previous reviews). I can't wait to make this for breakfast the next time we have out of town guests.

Grilled Cilantro Salmon

Very easy and very good. I prepared the marinade exactly as directed, and cooked salmon in the broiler for about 5 minutes on each side. The carmelizing effect of the honey in the broiler was really delicious. A great way to use the extra cilantro I always have on hand after making guacamole.

Jamie's Cranberry Spinach Salad

I just brought this salad to Thanksgiving and everyone really liked it - even the people who don't like spinach. The only changes I made were to toast the dry sliced almonds at 350 degrees in the oven for 10 minutes and I added a 1/2 cup of gorgonzola cheese. Several reviewers said that the dressing was too sweet, but my family thought it was perfect. Guess it just depends on what youre looking for. I will definitely make this again.
