this is the second time I've made these. This time using half organic beef and half bison. Also only made half of the recipe for the two of us. I really love that feature on this site, changing the servings. I made these in my Bella meatball maker, looks like one of those cake pop makers, from Macy's. I am not a good meatball cooker but in 12 minutes Bella makes 8 big juicy meatballs. Tonight they were for a meatball pizza, yummmy.

Twice-Baked Sweet Potatoes With Mini Marshmallows

I just made these tonight for a delayed Thanksgiving meal with my husband. I did add a little brown sugar and cinnamon and nutmeg. The taste divine, the marshmallows oh yeah! The only issue was the mixture didn't move in my blender, so I scraped it all into a bowl and used a mixer. Will definately make this again!

Pork, Broccoli and Rice Casserole

great use of a dry smoked pork roast. My only substitution was the veg. I used a corn, pepper black bean mix as that's what I had on hand. I also put some smoked cheddar cheese in it, didn't like the cheese on its own but work well in this dish. I love curry, you may want to add salt to your taste.

Molly's Chicken

This was good and easy. I wanted the sauce to be a bit sweeter so I added a couple more spoon fulls of sugar at the end. Also it was very watery so i thickened it with cornstarch. The chicken was falling off the bone after 7 hours, so I picked all the meat off the bones and put it back in the sauce. It made alot so I froze most of the leftovers.

Beef Pot Roast

Even though my piece of meat was small-about 2lbs, the flavor was outstanding. I'm thinking this is the main dish for Christmas this year. I had 2 servings of this meat and just finished nibbling on the crispy outer crust. This is way better than the over sauced and veggie roast recipes I've tried before. You must try it, just as its written.

Oh My Gosh Muffins

Wonderful tasty morsels! I only made the following changes- 1/2 applesauce and 1/2 butter, 1/2 sourcream and 1/2 yogurt, bittersweet chocolate chips. I may make them even healthier next time!

Fruited Curry Chicken Salad

I just made this for lunch. Everyone loved it. The curry was a perfect compliment to the salad. I used a large can of chicken and added 1 shredded carrot. Other than that I followed the directions and I will definately make this again. The flavors just melled together in perfection!
