Banana Muffins II

Made 12 beautiful muffins, and they also freeze great. Added about 1/2 cup mini choc chips, reserving about 6 tablespoons for decorating tops before baking.

White Chocolate Fruit Tart

Followed the recipe using a 12' tart pan, fresh strawberries, kiwi, and then the canned mandarins. For the glaze, used homemade kiwi-mango jam - everyone raved about this one!

Key Lime Pie VII

Key Lime portion per recipe with great results, even used low fat sour cream and fat free sweetened condensed milk. For crust used 5 oz. finely crushed animal crackers, 3 tbsp. brown sugar, 4 tbsp. butter, and a pinch of salt. Simply a winner!

Donut Muffins

fast and easy-really does kick a donut craving! i used lite butter and skim milk, also just placed warm muffins in a ziploc bag with sugar to coat-straight out of the oven (no additional butter needed)

Soy Milk Pancakes

Have made these twice in the past week, using unsweetened natural flavor almond milk. Both times I skipped on the oil. First batch I used AP flour, 1 tsp vanilla, and also added 1 medium mashed banana with chopped walnuts. Second time, I used 1/2 wheat flour and 1/2 AP flour, and used vanilla/almond extracts per recipe. All my pancakes can out with a nice light, fluffy, and smooth texture. Rated 4 stars b/c though they are a good simple recipe, they are a little on the bland side. And just a tip-as with any pancakes-I do find the fluffyness is effected by how u are mixing the dry ingredients with the liquids. Do not overmix-combine until just moistened, and it will usually have some small bubbles in the mixure once it sets for a few minutes-do not mix these out-this is what will add in a light texture.

Grain and Nut Whole Wheat Pancakes

Favorite 'healthy' pancake recipe! Halfed the recipe and still used 1 whole egg. Ground up oats with 1 tblsp almonds and 1 tblsp walnuts. Used skim milk- 1 1/4 cup- and added 1 tblsp apple cider vinegar for buttermilk sub. Also used applesauce in place of oil. Had a really nice fluffy texture, but super filling, and did I mention delicious and nutritious! Made 5 generous sized pancakes (1/2 cup batter per pancake).

Mashed Sweet Potatoes

Great idea, husband and me really enjoyed this. For 2 people, used one extra large sweet potato, 4 tblsp light butter, 2 tblsp skim milk, and sugar free maple syrup to taste. We liked ours just a little sweetened, maybe used approx. 1/4 cup syrup. Ended up with about 3 servings.

Lemon Cake

A hit with my family! Light, moist, and flavorful. As others suggested, used lemon cake and lemon pudding, also substituted 1/4 c of water for lemon juice, and also zest of one lemon-divided between cake batter and icing. Made a tiered 9" round cake, and layered with raspberry filling. Simple fruit filling recipe: use Polander seedless all-fruit spread, any flavor, microwave jar for approx. 30secs, and add in small box jello, in same flavor as fruit spread (I used all sugar free and fat free add-INS), whisk, cool completely (can even place in freezer for 10 mins), then spread on cake with desired layers. So quick and simple-intense fruit flavor, and perfect spreadable texture, without soaking into even this moist cake!

Nougat Cookies

Didn't care for these much-seems to be missing something, maybe some salt/vanilla would do the trick. The nougat was interesting, easy enough to make, but didn't really add anything to the cookie itself except for a simple crunchy-sugary taste.

Grandma Johnson's Scones

Original recipe is great - but if you're in a pinch (like me), a few substitutes for a half sized recipe worked great! Used 0% greek yogurt for sour cream, sub. cream of tartar for 1/4 tsp lemon juice, and also used a flour mixture with white whole wheat and AP flours (1c of each), and one whole egg. Can't go wrong with any add-ins either!

Soft Oatmeal Cookies

My favorite favorite oatmeal cookie recipe. Even my husband, who claims to not like oatmeal cookies, begs me to make these. They are consistantly soft- I do not flatten before baking. Also, they store well in tupperware for a few days. Great base recipe, delicious on its own, but add ins work fabulous-we like cranberries with pistachio-white chocolate!

The Best Rolled Sugar Cookies

Rolled out nicely, but once baked, were very soft-and I like soft cookies.. Disappointed that moving them once iced, the corners of the cookie had a tendency to crumb because they were so soft. I also found the taste to be a touch heavy, maybe a little too buttery. Not a classic for me, but seemed to be enjoyed well enough by family.

Chocolate Pancakes I

Sundays's pancake day at our house, so we go through quite an assortment of trial recipes. Hubby, who is big chocolate fan, gave these 4 star, and said "they were very good." I did add mini choc. chips, about 1/4c, and used 1/2c batter for grilling. This made huge pancakes that were fluffy and cake-like along the outside, and a bit softer and a touch gooey in the middles-where the majority of choc chips landed. Cooked slowly as recommened, and served with powered sugar and whip cream. Nice chocolate flavor, not too sweet, just right for pancake :-)

Tropical Coffee Cake

Tasty-but did few adjustments to my liking-add 1/2 tsp coconut extact and 1/2 c coconut to batter. Also did half/half oil and applesauce. I used pineapple tidbits as well, just the right size pieces.
