Broccoli Mac and Cheese with Bacon and Potato Nugget Topping

This is the best mac n cheese recipe ever. I used a whole package of bacon, eliminated the butter altogether (except to butter the pan) and sauteed the broccoli and onion in the bacon grease after it was cooked. mixed in half the bacon with the pasta and used the rest to top it off before baking. also used galric powder instead of adobo (didn't have any). AMAZING.

chile-cheese bruschetta

cut the amount of butter in half, and toast the bread slices before putting the cheese mixture on. perfect!

Jalapeno Popper Spread

I also added ½ cup Panko bread crumbs along with the Parm Cheese & when you bake it in the oven at 375 for 20-25 minutes the top gets a little crispy!

Mexican Spaghetti Squash Stir Fry

This was great. I added corn and used veggie crumbles in place of the meat and it was very hearty. we topped it with a bit of cheese and sour cream, and fresh diced tomoatoes. really good, but didn't seem to pair as well with the spaghetti squash as I would have hoped. it would make a fantastic chili with some added diced tomatoes and a bit of vegetable or chicken stock. would also make a delicious nachos topping.
