About this Cook
I am a Pastor's wife who hates "entertaining"! I love having people over but I am very casual and love to have others in my kitchen working with me and figuring out how to feed lots of mouths(usually teens) with little food. I have been married for 19 years and have 2 sons (16 + 17). I love working with teeneagers 'most' of the time. I started cooking as a kid for my 'meat & potatoes' family so mostly I cook basics with a twist. I live in the far North so fresh is not always available or affordable so I have learned to make do with what I can get.
My favorite things to cook
I love to bake or make funky salads. Cookies are my specialty.
My favorite family cooking traditions
Making Perogies from scratch. Great-Grandma's butter tarts at Christmas. Cheesecake for my eldest's b-days. Rhubard stew is always fun to have on hand in the summer with Ice Cream!
My cooking triumphs
I very rarely plan a meal so when one comes together and works and everyone is pleased, that is a triumph for me!
My cooking tragedies
When I first tried boiling potatoes (age 12) but didn't realize that you needed to add water. I discovered them 15 minutes later with a house full of smoke! I never talked on the phone while cooking for a VERY long while again.

Strawberry Oat Muffins
After trying multiple muffin recipes this season, I am so glad I stumbled on this one! It is moist but in a climate like ours where it is VERY dry, that is a good thing. I changed very little but did double the Baking powder (a trick I learned from my Newfie friends) so they rise better. I also added Raspberries as I didn't have a full cup of strawberries, Wonderful! Next will be to try it with whole grain flour instead of white and apple sauce instead of oil. Oh yeah...and blueberries! What a great base recipe!

Taco Seasoning I
I will never buy the packages of taco seasoning again! This was so much better tasting and so much cheaper :) I never had thought of making my own before but now that's all I'll do!

Gramma Bertha's Banana Cake
This recipe turned out wonderful! I made it exactly as the recipe calls for but did add 1 1/2 cups of semi-sweet chocolate chips. Then I poured it into a silicone Bundt pan and baked it in the microwave for about 12 minutes. I let it cool a bit then turned it out onto my dish. I dusted it with Icing sugar immediately which cause a very light glaze. It was delicious and very easy! I will definitely make this again!
