Orange Coffee Cake

The only change I made was soy milk instead of regular ( I always do that) and followed rest of the recipe. The batter came out very hard, almost like a dough...I had to double the milk to be able to mix it. It took me 50 min to bake. It's not a bad tasting cake, I am probably going to enjoy it tomorrow morning with my coffee.

Jumbo Fluffy Walnut Apple Muffins

These are really yummy indeed! I put soy milk instead of regular and reduced the sugar to only 1 cup which is more than enough...next time I will use even less. For the top sprinkle I kept the butter (cut in big pieces) in the fridge together with the sugar, cinnamon and flour required and just before sprinkling the muffins I used a fork to cut down the butter in the pea size bits. Gold recipe for sure! Thank you!

Cranberry Muffins

Cranberry Pistachio Biscotti

Wonderful and easy! My first time making biscotti and this was a huge success. I used almonds instead of pistachios and it turned out just fine. I also put in some orange zest for added flavor.

Chocolate Biscotti

I found this recipe a lot of work. There's way too much sugar in it, most recipes for biscotti call for less than 1 cup. Very dry also...I had to add water and oil in order to be able to mix it. Very sticky...And I find baking soda gives it an unpleasant smell. I used baking powder instead. Don't think I'll be making this again.
