Pineapple Crisp

This was dessert on a cold, rainy night and it was a 10. Cut the butter down by half and the crunch came out excellent. I added brown sugar to the pineapple as another suggested and it gives the pineapple a nice texture, almost a bit of a chew. This with a big gob of vanilla ice cream on top is a home run! Excellent for a last minute dessert idea as it's all stuff in the pantry.

Grand Marnier Chicken

This is one of my go-to meals for holiday's and other times when I have to feed a lot of people. For Easter I tripled the chicken and doubled the sauce, using oj concentrate instead of juice, and it got raves. I make it a day in advance, adding the Grand Marnier right before putting in the oven and it's a great entertaining meal. The sauce is great not only on the chicken but with rice on the side and it's even better as leftovers. Great recipe!!1

Pasta Pomodoro

This was my last minute Valentines Day dinner. I used canned tomatoes and swapped out the chicken stock for white wine. It was very flavorful and the sauce was good for dipping the bread in. I would totally make this again as it went from an idea to on the plate in about 25 minutes.

Gujarati Carrot and Peanut Salad

What an awesome side dish this turned out to be! It was quick to make, tasty initially and even better the next day. So much more fun than the same old, same old roasted carrots. Each different flavor in the dressing sings out to you and the peanuty crunch makes your mouth happy. This is definitely getting into a regular rotation!

Grandmother's Buttermilk Cornbread

I followed the recipe without any alterations and it was delicious! Sweet, tender, moist and wonderful next to a bowl of chili. I will be sure to whip up a batch whenever there is buttermilk in the house.

Glazed Meatloaf II

Very flavorful meatloaf. There definitely is a twang with the lemon juice- in a nice way. I loved the idea of the other reviewer to blend the ingredients in the mixer. It make a much smoother texture. I too broiled for the last few minutes to make the glaze on top bubble. I can't wait for the leftovers on a sandwich!

Butternut Squash Bisque

Fabulous. Creamy. Delicious. Easy. Warm and Filling. I roasted the squash and sauteed the carrots with the onions but those were the only alterations I made. The cream is a must as it makes it decadent!

Banana Sour Cream Bread

I made this for Christmas morning and it's the best banana bread I've ever had. Nice and moist! I followed recipe but baked in 3 normal sized loaf pans at 325 for about 1 hour 10 minutes and they came out perfectly. Will definitely use this one again when the bananas pile up!

Irish Chicken and Dumplings

I followed as written and took the tip to par-boil the potatoes before adding to cut down on cooking time while in the stew.I cooked this while coming in and out while pulling my garden apart and what a treat at the end of a long day!!! It got raves from my family and I will certainly make again- it's well worth the longish cooking time.

Jenn's Out Of This World Spaghetti and Meatballs

Freakin' awesome!!! The meatballs are so tender, and without all the grease of frying or baking them first. I put a few tablespoons of sugar plus a few of grape jelly in and the sweetness was just right. I doubled both the sauce and meatballs and now can share with my parents and have leftovers during the week. A+++

Oklahoma Brisket

On the top of my print out for this recipe, my notes are "off the hook" as this is the best brisket recipe I have ever found. It comes out perfectly and is devoured, even by my picky kids, every time I make it.

Swiss Cheese 'n' Onion Quiche

This recipes is great for a weeknight. It takes minimal time to pull together and is delicious. I bake the pie crust before filling it at 400 degrees for 10 minutes (the first 5 with double foil on the bottom and the second 5 without.) This is in my regular rotation now
