Slow Cooker Lentils and Sausage

Great recipe, but be sure to set the temperature on your cooker high enough to keep the liquid slightly boiling (my cooker doesn't have low and high but temp settings). Even though this cooked for 10 hours while I was at work, lentils still were not completely cooked. Bringing things up to a rolling boil for about 30 minutes finished things off nicely, though. Family loved this dish, perfect for days when it's a little cold out. Will definitely be putting this into regular rotation.

Slow Cooker Adobo Chicken

I have made this dish twice in a week and loved it both ways I made it! First time I followed directions exactly and thought it was fabulous, but my wife said it was too salty for her taste. Second time out, I cut the soy sauce back to 1/2 cup, added 1/4 cup water to compensate. Definitely was less salty (and not as tasty for my palate) but wife was pleased. I will confess to being a saltaholic, so those who don't care for salty food may want to cut back on the soy or use low-sodium soy sauce. Either way you do it, this is a great recipe for the middle of the week when you need something simple yet delicious for the slow cooker.

Slow Cooker Sweet and Tangy Chicken

Followed the recipe as is, using Sweet Baby Ray's sauce, and my wife and I found it sickeningly sweet. Definitely needs something spicy added to offset the sweetness. If I try this again I'll using a HOT BBQ sauce, not sugar-based BBQ sauce, to balance out the pineapple and sugar. Or maybe add chopped red chiles like General Tsao's Chicken to give it some kick. BTW, our friend, who sprinkles sugar on ice cream, loved this dish.

Jenny's Cuban-Style Slow-Cooker Chicken Fricassee

Fantastic! Made it again the next week after my wife went crazy for the first batch! I followed Karen H.'s advice on the sazon and sofrito, and also used canned potatoes for laziness' sake. The second batch is chopped up a whole chicken and put it all in, and it all tasted great. Served over cooked brown rice, it easily made a dinner and 3 lunches worth.

Slow Cooker Maple Country Style Ribs

Love this recipe! So simple, yet so delicious. But, I did make some changes. I followed others advice, used 1/3 cup of maple syrup and soy sauce, but I also added 2 cups of beef broth, so that the meat was completely covered. This eliminated the dryness experienced with my first two tries on this recipe, but retained the fall-off-the-bone tenderness. Also, the broth didn't dillute the flavors, as the 2 cups of water did on try #2. This is now a family favorite!
