Old Fashioned Giblet Stuffing
This is a good start. I've always simmered the giblets and neck with chopped leaves and stalks from the center of the celery stalk (I find them he most flavorful), chopped onion, chopped garlic and bay leaf. Remove as much meat from the neck as possible and chop or blend the giblets in a blender with some of the broth created when simmered. Mix with the dried bread and add chopped apple (raisins if desired) and herbs. Use the rest of the broth and chicken or vegetable broth the dampen.

Pork in Peanut Sauce
Very easy and I used the recipe as a starting point. I didn''t use frozen stir-fry veggies opting for fresh veggies (julienned carrots, celery, snap peas) and used green onion instead of the onion. It's on the salty side, as others have stated, so next time will use low sodium but still will cut back on the soy sauce. Will definitely make it again.

Mini Meatloaves
This is now my go-to meatloaf recipe. My husband loves it. Since it's only the two of us now I half the recipe and it works just great. The leftovers make great sandwiches.
