Terrific Turkey Meat Loaf

I've been making meat loaf since I was knee high to a grasshopper. That is many, many years. I had ground turkey last evening and knew I wanted to a a meat loaf with it. I've cooked with ground turkey many times but usually masked in chili or spaghetti sauce. This was fantastic! I did add in about a 1/3 pound Italian sausage for flavor and binding. I exchanged the green pepper for a ploblano, only because that is what I had in the house. It gave it recipe a really nice flavor. Hubby LOVED this. That surprised the heck out of me. I knew he'd eat it, but actually giving it praises was another thing! This recipe will be on hand the next time I have a pound of ground turkey in the freezer and need a fairly quick meal.

Authentic German Potato Salad

This was absolutely perfect. The only change was adding a little celery seed, and about a sprinkle of flour to thicken it. I used tiny new potatoes unpeeled, and cut them in half after they were tender. Even hubby, who is picky about his German Potato Salad, really loved this.

Yogurt Shrimp Fettuccine

This was soooooooo good! Hubby loved it. I only had a pound of shrimp so cut the plain yogurt down to a half a cup. Also used white wine instead of brandy because it is what I had on hand. The cilantro was the perfect finishing touch.

Zesty Rice 'N' Bean Casserole

I had rice left over from last night in the fridge and really wanted to make some kind a of side dish with canned black beans. Instead of green peppers, I used plobanas for the extra heat. Oh yeah! I also used a can of Rotel and a half a can of diced tomatoes with onion and garlic. This is AWESOME! I topped it with sour cream and it is to die for. Can't wait to take left overs to work tomorrow.

Mediterranean Kale

I adore this recipe. Our winter Florida garden is thriving with kale right now, so I was looking for some different way to use it. This fit the bill perfectly. I took another person's advice and added cabbage to the steamer (bottom of the basket, then kale on top). I halved the recipe because it is just hubby and I, but kept the same amount of dressing. He LOVED it. I LOVED it! This is definitely on my rotation list! Thanks for sharing this!!!!

Penne with Chicken and Asparagus

I know this will sound weird , but as I got into this recipe, I suddenly turned it into an alfredo recipe by adding half and half, white wine and corn starch. It just seemed like it was lacking something thick to make it all stick together. I did give it five stars though because the base recipe was perfect for converting to an alfredo. It was so delicious.

One-Egg Egg Drop Soup

This was good and very easy. I didn't care much for the underlying flavor of the sesame oil, so will leave it out next time. Also, I used fresh eggs from our backyard hens, therefore I didn't exactly know if they were medium or large eggs. One egg just didn't look like it was going to be enough, so I used two. Two was perfect.

Asian Coconut Rice

I think I'm with some of the others in that I really couldn't taste the coconut milk. It seemed like a waste. The rice cooked perfectly, but I put all the ingredients in a rice cooker. Not sure if I'll do this again, but if I do, I think I'll add flaked coconut to see if that brings out more flavor.

Baked Scallops

This was phenomenal! Perfect blend of seasonings. The only thing I didn't have was the onion powder, but I don't think it made a huge difference. The only change I made was a tablespoon less butter, and a drizzle of white wine to the butter on the bottom the pan. FANTASTIC. I went looking for the left overs the next morning, and my daughter informed me she'd wiped them out the night before. This will go on my rotation list for sure!

Egg in a Boat

I've been wanting to try this for a long time. For various reason, one being that I'm wheat intolerant, I always put it on the back burner (no pun intended.) We have four backyard chickens, so I'm always looking for ways to use the numerous amounts of eggs we amass. I made this for hubby this morning and topped it off with heated chili from last night. Because our range died last week, I made this on our Cuisinart Griddler. I felt like the bread didn't get quite as toasted as I would like, hence the four stars. I will make this again, but work on making the bread more toasted (like grilled cheese sandwiches). I have to add that hubby was very happy with the meal, so I'd give it 4 1/2 if I could. I think it would be fun next time around to play with some seasonings as well.

Creamy Spiced Coleslaw

This is always the recipe I come back to when I want to make coleslaw. Hubby likes his slaw with vinegar. I like mine with mayo. This is the best of both worlds. My mom learned to add sugar to her slaw from her grandmother. I did cut the sugar in half though because since starting South Beach a few years back, my taste buds aren't so into sweet. To sum it it up, this is a classic, easy recipe that suits this household.

Wisconsin Bratwurst

Oh yeah. That's what I'm talking about. Piercing the brats allowed the flavors of the beer and onion in. Unfortunately it was late at night when I made this, so I brown the brats in a cast iron skillet instead of on the grill. The onions from the beer bath were just AWESOME. My husband said they were the best brats he's ever had!!! He's not a picky eater, but he can be stingy with his complements. I'm gluten intolerant, so skipped the bun, but I was impressed as well. I can't wait to try this again with the grill.

Tuscan Soup

So not on my South Beach Diet, but worth every bite. I'd par boiled chicken the day before for grilling with fresh basil, rosemary, oregano and bay leaves, then used the broth for mustard greens from the garden. The next day I had a ton of broth and some greens left, so searched for a recipe. I am not kidding, this stuff is to die for. Since I already had mustard greens in the mix, I only added part of the spinach. This recipe will be coming around again. I'm thinking crock pot while camping would be awesome.

Sloppy Joes II

Yikes! Way too sweet! Hubby and I have been low carbing for two years, and things just taste too sweet anymore. I still gave it four stars because the base recipe is AWESOME and EASY! Next time I will cut the brown sugar way down, if use it at all. I took the advice of another person and added Worcestershire sauce and white vinegar. Nice, zesty addition! Also tossed in some red pepper flakes, because I enjoy heat. Also, I didn't think it was soupy enough, so added some tomato sauce and a little bit of water. By the time it was done simmering, it was the perfect consistency. I was getting pretty tired of the same old Manwich routine. This is a great alternative.

Stewed Cabbage

I loved this. I used a little bit of olive oil, too, as well as about a half cup of chicken broth. Left out the salt, as we are trying to watch our salt content. Hubby had some thyme out in the garden, so we threw that in also. What I love about this recipe is that it is so versatile. The possibilities of add-ons are endless. You can go totally vegetarian, or add meat. I might try potatoes in this sometime. Also, I bet this would convert to the crock pot beautifully.

French Toast I

Great recipe but as I noticed from others there were issues with the french toast cooking thoroughly. I would suggest either letting the bread stale, or toasting the bread first. This is how you end up with crispy french toast that is not undercooked. I learned this from my mom as a kid. The end result was that no one complained, and I actually received kudos from those in my household.

Ramen Coleslaw

This was okay. My husband did not like this and he'll eat just about anything. I just don't get the ramen noodle part of it. I know it is supposed to be crunchy, but by the time I served it, it was mush. My husband asked me what it was because he was afraid the coleslaw had worms. The flavor wasn't that great for me either. Something I thought we'd be eating through out the week got thrown away before we ate anymore. I gave it three stars because of the ease, even though it just wasn't my cup of tea flavor wise. Others might find it more palatable.

Pepper Jelly Appetizer

This was sooooooooooooo awesome. Hubby went crazy over it. We have served this with summer sausage as well, and the combination is outstanding. Definitely on my rotation list for appetizers.

Laura's Lemon Roasted Potatoes

I'm still tossed on what I think about this recipe, hence the four stars. First of all, I took the advice of others and left out the butter. I used 1/3 cup olive oil and it was plenty for roasting. I despise peeling potatoes so used red potatoes, skin on. I squeezed a half a lemon for the juice, and then because others complained about the lack of lemon taste, I used the zest of the left over lemon peel. Everything went into a zip lock bag and marinated for approximately a half hour. I felt like the dill was way over powering, and I like dill! I'm going to try this again, but this time I might add lemon pepper, and cut back on the dill.

Sauteed Corn on the Cob With Chili-Lime-Cilantro Spread

I totally dug on this. It is sincerely necessary to use a cast iron skillet to get a nice browned flavor over the corn. Using a non-stick pan will not do. I despise cooking things in the microwave, so boiled the corn after soaking it in a pot of water with a little bit of sugar and salt. The idea of cooking it in plastic wrap just didn't seem right. I didn't have fresh cilantro so used dried. I love cilantro, but just couldn't taste it like I wanted to. Next time I make this, I'll use fresh and let it meld longer. The only reason I gave this is a four is that I asked hubby what he thought. He said it was okay, but he wouldn't want the dressing every time. I liked the concept but will use fresh cilantro next time. Like others, I can see how this could be used as a chip dip or on other veggies later.
