Pumpkin Bread V

so good i made it multiple times! followed the recipe perfectly the first time, then wanted to make more cupcake-y muffins, so i added about another half cup of pumpkin and took out the milk. delicious! will make again and again and it is so easy!!

Honey Garlic BBQ Sauce II

This sauce was delicious! After reading the rest of the reviews, I too cut back on the garlic. I only used 3 cloves, and that was the perfect amount. I halved the hot sauce and creole seasoning (I'm sensitive to too much spice), and left out the butter completely. It was absolutely delicious, although the consistency was a little difficult to work with, especially after it had been put in the refrigerator. I might leave out the corn starch step as well. Before I added the cornstarch, the consistency was just about right. Over all, an amazing BBQ sauce!!

Lemon Icing

This icing is perfect on top of sugar cookies. I always use fresh lemon juice (just make sure you get all the seeds out!) with this, and I get requests to make them again and again!

Slow Cooker Vegetable Chili

My husband does NOT like vegetarian dishes, but he LOVED this! It is so hearty and filling that you will never miss the meat! I love that this chili is hearty and healthy and so very colorful! I left out the ingredients I didn't have on hand, and added a few more cans of whatever I did have in the pantry. I added a can of corn and a can of ranch style beans, and extra bell pepper, and added some hot sauce and creole seasoning. This was a great recipe if you're cooking on a budget or need to clean out the pantry and fridge! I will be keeping this one in my recipe box! Thank you!

Sweet Potato Potato Salad

Delish! My husband doesn't like potato salad, but he gobbled this one up! I made a few changes that I would recommend: I used ONLY sweet potatoes, added a chopped apple (left the skin on all...it's good for you!), cut down on the mayo, added a bit more mustard and a couple heaping spoonfulls of sweet relish. very good, will make over and over!

Tony's Summer Pasta

very good and full of flavor. in order to cut down on the calories, i left the cheese out of the recipe completely and added a few more veggies to the marinade. i put some grated parmesan on the table when i served it so people could add a little parmesan to the top if they wished, but no one really missed it. it was a huge hit. i was able to serve this again cold as a nice summer pasta salad using bite-sized pasta instead of the pasta strands. fresh lemon is great in this dish as well!

Stuffed Eggplant Parmesan

My husband is not the biggest fan of eggplant, but he tried this and LOVED it. very good and very easy to fix on a night when you don't want to stand in the kitchen for an hour. I added a little turkey sausage to the eggplant mixture in the skillet to increase the flavor. Very good! Will make again.

Briam (Greek Mixed Vegetables in Tomato Sauce)

Marinara Sauce II

This was such an easy way to make my own marinara. I made it thinking I'd have enough leftover to use on another night, but my husband loved it so much he ate it with a spoon after his pasta was gone! He has asked me daily when I'm going to make this recipe again. This is a fun recipe to play around with as well...I added whatever veggies I had left over in the fridge to the sautee and it was delicious.

Easy Baked Tilapia

I never have leftovers when I fix this dish, and it's great for a night when you're in a hurry. I like to use fresh veggies instead of frozen. I typically use squash, zucchini, carrots, broccoli, bell pepper, onion, and eggplant, or whatever I have in the fridge. I don't have old bay seasoning, so I always play around with herbs and put on whatever smells good to me at the time. thyme, rosemary, oregano, and a little bit of chili powder for a kick is hard to beat. the lemon adds a great kick at the end as well. fabulous dish.

Peach Cobbler Dump Cake I

This was REALLY GOOD. by accident, my husband brought home no sugar added peaches sweetened with splenda and half-the-sugar yellow cake mix (he swore it was an accident!) but we made it anyway and it was DELICIOUS. i didn't put much butter on it because i was out, but i used what i had, sprinkled dark brown sugar over the top and topped it with a drizzle of honey before baking. we both went back for seconds!! i usually don't like reduced-sugar desserts, but i will definitely be making it again!

Sweet and Sour Chicken I

Very easy to make and it was a big hit at my house!! However, in order to cut down on calories, I did away with the breading altogether and I cut the chicken up into small pieces and cooked it in a pan with only cooking spray and then added the onions and peppers when the chicken was almost done. Very good, will be making this a staple in my recipe book!

Apple-Stuffed Squash

This was delicious! Who would have thought that you could have a vegetable for dessert?? The only thing I would change would be to drizzle some honey over the top right before serving, that way the other rims of the squash get a little sweetness too. Very good, and very simple.
