Best Steak Marinade in Existence

My guys raved over this! I really like a teriyaki type taste which this is not but it was a nice change. I made it exactly as written and I do think that putting it in the blender was an important step. It helped combine the flavors better. From now on, I think I'll put any marinade with solid ingredients (garlic, dried spices, etc) in the blender.

Three Cheese Chicken Penne Pasta Bake

My family raved about this! It's the perfect recipe to use as a starter for using up what you have. It's very forgiving. I had mushrooms so I tossed those in but I didn't have cream cheese so I used chive & garlic brie that was about to expire. I didn't have any mozzarella so I used cheddar. I'm sure if you didn't have chicken it would be great with ground beef or left-over roast or turkey.

Old Fashioned Coconut Cream Pie

I've made this as written & following some other reviewers' tips. DO use the whole can of coconut milk since it's easier to use up leftover half & half than leftover coconut milk. DO use 2 WHOLE eggs, not 3 yolks as some have suggested as the resulting "custard" flavor overpowers the coconut flavor. DO use real whipped cream. AND, when I increased the toasted coconut IN the pie, I got some complaints about the texture being less creamy but they loved a little extra on the top. I also made one where I cut the prep time in half by using a graham cracker crust & frozen whipped topping. I liked it better but I was the only one. Everyone else's #1 choice was the pie that was made as written except for the whole can of coconut milk plus half & half to make 3 cups & real whipped cream instead of frozen whipped topping.

Simple Baked Beans

These beans rock! People who don't even like baked beans thought these were fantastic. Cook's Illustrated said "Bush's Best Original Baked Beans" have the best texture & rated them second best for taste so I started with them (NOT "Pork & Beans"). The ONLY way the recipe was altered was to par-cook the bacon in microwave (not a fan of limp bacon). These were quick, easy, and tasted great! What more could you ask for?

Ciabatta Bread

There's a reason it's called "artisan" bread. Even with a bread machine, baking bread is an art. You can't just dump everything in the bread machine & expect perfect results. All bread recipes should give flour measurements by weight or as a range when measured by volume. Even though the bread machine helps with the physical work of bread-making, you're still responsible for making sure the dough is right by adjusting the flour accordingly. Flour requirements will vary based on weather conditions. During the initial knead, look at the dough to make sure it's forming a nice smooth ball, not a gummy mess and add more flour if needed. This recipe makes a nice loaf if you pay a little attention to the dough in the beginning.

Downeast Maine Pumpkin Bread

I'm usually a good baker but I've had no luck with this. Tried it twice. The first time the outside formed a beautiful crust and a test skewer came out clean but the crust must have wiped it because when I cut the loaf, liquid batter flowed out. The second time, I used muffin tins instead of loaf pans & they caved in in the middle. I really liked the taste of the crusty part but I can't this to come together.

Changed: added 1/2 again as much spice & added 1/4 tsp grnd clove Taste: GREAT! Gingerbread Men: Awful! 375 is too hot for their little legs and arms which burnt before their bellies were cooked Better: cook at 350

Sue's Hot Fudge Sauce

Delicious but DANGEROUS! Made a huge amount - too much for the average blender. A blender jar over-filled with boiling sugar-based sauce is a disaster in the making. Luckily my family thought this chocolate sauce was well worth the blistering burn I received while holding the lid on the blender. Seriously, use a very large saucepan & put a dish towel over the blender before turning it on. Makes a little over a quart.

Cheese Sauce Over Cauliflower

This sauce is easy to make but I found it more flour-y than cheese-y. And it made a lot! I'll use the rest tomorrow night but I'm adding more cheese and next time, I'll be sure to use extra sharp for more flavor.

Spaghetti Carbonara II

I was hoping for a creamier end product. My eggs scrambled and I ended up with more of an Italian noodley egg fu yung. I actually like Lean Cuisine's chicken carbonara and was hoping to end up with something closer to that. I should have saved myself the work and calories and stuck with the freezer and microwave.
