Chocolate Mint Cookies I
If you like the Girl Scout Thin Mints, these are the cookie for you. I used Andes Mints for the top. I hate mint and I ate 3 of them. LOL!!

All Day Apple Butter
I used 3 kinds of apples, Gala, Honey Crisp and Golden Delicious. After I cleaned and cored them I had about 4-1/2 pounds of apples so I cut the sugar to 2 cups. I think when I make it again I will increase the sugar by 1 cup. It is still very good but I think my family will expect it to be sweeter. I cooked it on high for the first hour then another 15 hours with the lid on then 3 more with the lid off. Then I used the whisk attachment on my hand mixer and mixed it for a minute. It is a beautiful rich dark brown and am very happy with the result however it only made 5 half-pints. I will make it again but would make several batches so I could share some.

Best Spanish Rice
I made this just as written with one addition, I added a half of a hot banana pepper in with the onion. I used home canned salsa and it was so good! I made chicken breasts in the oven while this was on the stove top. When they were both done I put the rice in a baking dish and put the chicken on top then sprinkled cheese over the top and put it back in the oven to melt the cheese. My hubby said it would be good with hamburger in it too like Hamburger Helper.
