Tangy Cauliflower

Reviewed: Jul. 18, 2012
its missing a star because I substituted the mayonnaise with miracle whip and used hot and sweet mustard , smothered the cauliflower with it and baked at 450 for 20 minutes on cookie sheet... so incredibly good!~ skip the microwave!

Spicy African Yam Soup

Reviewed: Dec. 7, 2009
This was a very comforting tasty soup/stew!! Thought because it was called spicy african YAM soup that it had Yam in it... so I added Yam and I added sweet potato... I wouldnt have done it any other way! they worked perfect together! Put extra crunchy peanut butter in it and omitted the thyme... thought that ingredient didnt fit...

Creamy Mushroom Spaghetti Squash

Reviewed: Aug. 24, 2009
Loved it! I definently only put 2-3 T of butter, and I spot cooked the garlic cloves in a skillet with the peeling on,before i cut them.. It gives them a wonderful roasted flavor... the only other thing I added was a little less than a 1/4 of cup of parmasian cheese to the sauce... very creamy!!! Thanks for the recipe!

Creamy Chicken and Rice Soup

Reviewed: Jan. 1, 2009
the idea of this recipe is a good one.. i definetly had to make a lot of changes though.. I put brown, white and wild rice in this plus carrots, 5 garlic cloves,...Hint: I saw this somewhere and i always do it... keep garlic cloves in their shell and put in frying pan.. roast till little brown spots all over(couple mins. dont let burn!) and then take off shell and press them on a flat surface... make paste and add them to your Rue.... Had to add a ton of other stuff... Thyme, fresh parsley and simmered 2 bay leaves with rice..definetly only put 4 Tbls of butter and a Tbls of flour...Very good.Thx

Peanut Butter Vegetable Chicken Soup

Reviewed: Oct. 26, 2008
Love peanut soup!! I put some jalapeno and cayenne pepper in mine cause i like it spicy! To go Thai on this one add a little coconut milk and a fresh squeezed lime at the end. But it is wonderful like this!! You can be creative with the veggies in this one! Thank you for this great soup!!

Bacon Quiche Tarts

Reviewed: Oct. 16, 2008
This was a great BASE for easy quiche. I used regular buttermilk biskit refrigerated dough and rolled little pieces out, flat, till they were very thin, and I put them in a mini cupcake pan..then i sauted garlic, bell peppers, and onion together and then poured into egg cream cheese mixture. I only used half the cream cheese and added one more egg... one more thing I thought was a GREAT addition from a previous review.... 1 tsp Creole seasoning. SOOOOOO GOOD!!!! THANK YOU!!!

Spicy Chicken and Cilantro Wontons

Reviewed: Sep. 30, 2008
very tasty! great flaver and spices.I only used half of the cilantro it calls for, two seemed a little intense. my only suggestion is DONT over blend the chicken! blend all other ingredients first and then add chicken, only blend a little, dont puree it!!! thank you for this recipe!!

Tropical Salad with Pineapple Vinaigrette

Reviewed: Sep. 8, 2008
this was a refreshing change to salad. I did what was suggested and put garlic and ginger and sugar in the dressing. Letting the dressing sit with the spices in it for a couple hours is a MUST! Paired it with white rice/sauted veggies with left over dressing!) and a bag of maui style rib meat from Trader Joes! Quick and lovely. thank you thank you!
