Oven-Roasted Asparagus

My husband and I enjoyed this recipe. I have to say that I have always disliked asparagus...and this recipe was terrific. I wouldn't use quite as much pepper (maybe 1/2) next time as it was a tad spicy for my two kids. It looked great too. I baked it in my small countertop convection toaster oven and it took only 6 minutes. It was done perfectly. I will definitely make again. I used all of the ingredients.

Fluffy French Toast

This french toast was very good. I only had regular bread on hand and that was good. My girls (9 & 11) loved it also. We will definitely add it to our morning collection.

Awesome and Easy Creamy Corn Casserole

I made this for the first time for a large potluck gathering. I doubled the recipe (9x13 pan) and it was completely gone. I had several people ask for the recipe. I will definitely use this recipe again for large gatherings. I would add though that I had to add quite a bit of time (15-20 min) to the cooking time with the larger (doubled) batch.

Beef Nacho Casserole

My husband and I liked this recipe. I decreased the chili powder to about 1/2 tsp in hopes that the two children 6 & 9 would like it, but they thought it was too spicy and didn't care for the salsa. We will make it again, but might modify the to make it less hot. Also substituted plain yogurt for mayo to reduce fat content.

Burrito Pie

This is a family favorite. My girls love to "make" this themselves...I give them each 1/2 the recipe and they layer it all. We make one 8x8 pan, and freeze the other half in a foil pan wrapped in foil and then insert it into a feeezer ziplock bag to freeze for later. Frozen, it takes about 75 minutes to cook if you forget to take it out early.

Too Much Chocolate Cake

Fabulous!! I did have to cook it for quite a bit longer--nearly 15 mintues longer, but it turned out great. Everyone loved it. Everyone has requested it again.

Slow Cooker Chicken Taco Soup

Chicken Stock

fabulous! I didn't change a thing. It is very nice to go to the freezer and pull out this stock to add to my chicken pot pie, or other recipes rather than to try and remember it at the store!

Slow Cooker Chicken and Dumplings

This was a hit with my two daughters (6 and 8 years old) and my husband. My 6 year old even had a second helping! I must have added too much liquid as I had to put the crock pot in the oven to get the bisquits to cook (I gave up on the slow cooker after 45 minutes and not being even close to finished). It was very good...definately will do again. I did use mostly chicken stock with some water as I had it on hand.

BBQ Pork for Sandwiches

I made this exactly as the recipe called for and it turned out perfect! It is a family favorite and now a staple dinner for us. I froze the leftovers and it warms up terrific for a quick meal. I buy the meat in about 7lb packages and make 2 batches. It makes several meals for our family of four.
