Broccoli Salad V

I didn't put the raisins in as my son doesn't like them. It was still a hit. I will be making this one again soon. I wish there was a non creamy dressing though.

The recipe is great. I would give it 5 stars other than the amount of butter I used to fry them ideally. I tried using less but it left them pale and dry. I will definately use this again. Boneless pork was great too and a bargain.

Strawberry Avocado Salad

I have a very similar recipe but it calls for candied pecans which are a bit of a nuisance. The dressing method is quick and simple. Definate keeper.

Firecracker Grilled Alaska Salmon

This is very good. I find it a bit too richly flavoured for me as I think it masked the natural salmon. But would do it again or for a party.

Chipotle Crusted Pork Tenderloin

My 14 yo said it was "OK" and then ate so much of it there wasn't enough to go around. He said he would prefer chicken !!! It was superb. I used twice the marinade, brushed the meat in oil and left it for 4 hours to try to soak the beautiful chipotle into the pork. I think the online recipe is likely best. Thanks for this 'hit'.

Cranberry Pecan Salad

A family favorite of ours and passed around all the families that ever try it. We use a high cal version with caramalized pecans. Soaking the dried cranberries into the oil helps too I think.

Beef Marinade I

The flavour is OK, perhaps a little vinegary - that may be my choice of vinegar. It didn't do too much to tenderise an eye of round after 48 hours. I would use this again but tweak it.

High Temperature Eye-of-Round Roast

2 day marinade and 500 degree roast and wait - too chewy for me. I do not usually buy this cut, but I thought I would give it one try. I ended up taking the largely uneaten roast and slow cooking it into a beef barley soup. It was good in that!

Fabulous, quick, strightforward, very fresh , 'bright' and top tastes. Only down is my cholesterol level. I should use the low fat mayo next time.
