About this Cook
I'm Cajun and that is mainly the type of food I enjoy cooking.
My favorite things to cook
I do also love to bake desserts and cookies.
My cooking triumphs
It is not my cooking triumphs but my daughter's and that is enough for me. She has been in several bake-offs and cookerys and only in one competition did she walk away with no recognition.

Crawfish Fettuccine II
I tried this recipe today. It turned out fantastic. I cut back on the seasoning…I used only two teaspoons of Cajun Seasoning. (I used Cajun Shake.) I also used about 1 1/2# of crawfish. Before today I had never made crawfish fettuccine. I usually eat my crawfish boiled or ettouffe' but this was also very good. We were hosting several couples at my house and they all liked this recipe also.

Pralines
I made this exactly as it calls for. I lived in New Orleans for years and this recipe comes the closest to Aunt Sally's pralines! At first I was afraid they were going to be the chewy kind, but once they set up they were PERFECT! I stir mine continuously like they do at Aunt Sally's (last time I was there was a three weeks ago). The only thing different I did was add more pecans but only bc I have a ton of them in my backyard. When it started to boil I looked at the clock and added four minutes to the time. It might sound crazy but it worked for me. I wll post a pic too--it was taken RIGHT after I put them down on parchment paper, before they set up fully but I can assure you it didn't take them long to set up.

Blueberry Muffins I
I increased this recipe to 1 cup sugar AND 1 cup of blueberries. Turns out wonderful everytime. Hubby keeps asking for more blueberry muffins. And they look just SO BEAUTIFUL.
