Sarah's Rice Pilaf

This was just okay the first time I made it. Made it again today---Omitted garlic and onions, used them in powder form instead. Also used 1/2 C green bell pepper. Before covering and simmering, I added 2 Tbsp sun-dried tomato pesto and it gave this Pilaf an awesome flavor!!!

Mrs. Fields Sugar Cookies

These were really good. I used a whole cup of sugar as suggested by another reviewer and I think these cookies may not have been sweet enough without the added sugar. I don't bake much so I had to use a glass to roll with and the mouth of a double-shot glass as a cookie cutter. Sprinkled with regular granulated sugar and cooked for awhile longer than sugggested.

Spinach Stuffed Chicken Breast

Can't really rate this recipe fairly because I didn't have alot of the ingredients so I improvised. Only had chicken tenders so I pounded them flat and layered them in a glass dish with the stuffing in between. Used frozen spinach, onion, and italian sausage in the stuffing. Cooked bacon halfway before topping chicken. This would be better with some marinara

Baked Potato Soup

This was good but the second time I made it I added more potatoes and 1/2 head of cabbage I sauteed with the onions. Also, I boiled the potatoes so I didn't have to run my oven for an hour and soup was just as good as it was with baked potatoes. Also doubled bacon.

Roasted Pumpkin Seeds

Really liked these. Used olive oil(faster than having to melt butter) and coated seeds in cayenne and cajun seasoning. Cook time and temperature pretty accurate. I didn't soak or boil or dry these. Just rinsed, seasoned, and cooked.

Baked Zucchini Chips

These were really good. I cooked them way longer, until crispy, and ended up seasoning them alot more when they were done. I ate an entire tray by myself.

Hearty Lentil Soup

This was a really good recipe. I used larger carrot chunks so by the time they were cooked through(a couple of hours), the lentils and barley were a little softer than they should have been, but still good. I used a few more cups of liquid than the recipe originally calls for-I don't like thick soup. And while I intended to follow this recipe as written, I did add bacon (alot!) for flavor. My boyfriend is very wary of eating anything %100 vegetarian. Next time I will cut the carrots smaller and probably use the bacon and extra liquid again.

Lentils and Rice with Fried Onions (Mujadarrah)

This was my first attempt at cooking lentils. I cooked the onions about 45 minutes in Sesame Oil and added curry to the lentils, as some previous reviews suggested. I will be making this again!
