Red Beans and Rice

This was a good recipe. I think maybe it would have been better if I'd used fresh garlic and onion. This is definitely the best red beans and rice I've fixed, but I can't say I was blown away by it. I was a little worried that all of the seasoning would be a bit much, but it really blended together nicely. Still searching for the perfect red beans and rice recipe.

John's Pimento Cheese Spread

A teaspoon of garlic was WAY TOO MUCH. If you try this recipe, do not add a full teaspoon. It overpowered every other flavor in the pimento cheese. I couldn't even taste the pimento.

Pumpkin Cheesecake I

It was ok, but I didn't care for the premade crust. It just had a too graham crackery taste. The pie was not creamy, but that could be attributed to something I did.

Mushroom Almond Chicken

I was excited by this recipe because fresh sauteed mushrooms make me happy. The mushrooms were delicious, but I would recommend not baking the mushrooms with the chicken as they don't seem to add anything to the flavor of the chicken and are much better just sauteed and served warm. The almond crust on the chicken was great was much crispier than just a breadcrumb crust. I think I would like to find a way to bring out the almond flavor more; the basil sort of overwhelmed it. Also, next time I would cut out the ceyenne pepper; I don't think it added anything to the recipe. The chicken was delicious served with some wild rice.

This is a great recipe, and my hubby LOVES it. I would leave out the bacon, though, as it didn't really add anything. The only complaint I might have is that the beans are kind of dry.

This is now my husband's favorite dish. The only change I made was to add paprika to the flour dredge. I have trouble frying things, but I had not trouble with these! Great recipe!

Cheesy Potato Salad

This potato salad was not what I was looking for. I expected it to taste more like the potato salad that you get in delis, but it tasted more like a dry baked potato and after serving it once to my hubby, he requested that I put some boiled egg and mayo in it because it was dry. I would not make this again, but just go for a more traditional potato salad recipe.

To Die For Blueberry Muffins

This is a great blueberry muffin recipe. I used the recipe to make six jumbo muffins. I added more blueberries than recommended, and my berries were frozen, but the muffins still turned out great. Some other reviewers mentioned that the muffins were messy to get out of the muffin tin, but I greased my tin, and even though the topping sugar and butter spilled over, it still came up off the tin. The topping was a little overbearing. One reviewer said the muffin was not sweet enough, but I would say that with the topping, the muffins are almost too sweet. I think that next time I will try making the muffins without the topping. I used the whole topping recipe for six muffins, and it was a bit much. There was so much in fact, the topping fell into the actual muffin batter as it was baking which made the muffins harder to get out of the tin whole. The muffins were still delicious and the warm, gooey topping that dripped into the muffin was rich. Overall, this is a great recipe.

My Crab Cakes

This is a great recipe. I read some of the other reviews and cut the cayenne pepper some because I can't handle too spicy. I also substituted low-fat crackers to help out with the nutrition facts on this one. They were really great, and my husband couldn't stop saying how great they were. It's nice to be able to make these at home instead of spending fifteen bucks for two at a restaurant. I will definitely be making these again! What a great ending to a great day!

Banana Pudding IV

This recipe was really good. I actually subsituted all low-fat and low-sugar ingredients. I used light cream cheese, sugar free pudding mix, fat free condensed milk, fat free whipped cream, and low-fat Nilla Wafers. I was afraid that the lower fat ingredients wouldn't congeal well, but it was nice and creamy just like it should have been. It was delicious and very easy to make.

Ratatouille Bake

This was great. I had a lot more eggplant and zucchini, so I used more ravioli, but kept the same amount of garlic and onions, and it still had a great flavor. I will definitely make this again.

Smooth Sweet Tea

I was a little skeptical of the baking soda, but it totally does take away the bitterness. I didn't steep it but five minutes, because that's all I used to do without the baking soda, but I definitely could have steeped it longer for a fuller tea flavor without the bitterness!

Smokin' Scovilles Turkey Chili

This is by far the best Chili recipe I've ever made. My husband doesn't eat onion, but I just added extra bell pepper, and it was still delicious. Also, I cut some of the spice because I do not like it too spicy, but it was still great. The flavors and textures were delightful.

Oatmeal Craisin Cookies

This recipe was excellent! I took the whole batch to a small party and they were gone in literally 17 minutes. The changes I made: I didn't use raisins, I just added more craisins. I chopped up a handful of walnuts and threw those in. A previous reviewer suggested adding a little cinnamon, and I added a little over half a teaspoon.

Best Brownies

So easy and delicious. I love that it can be made from ingredients I normally keep around the house. I didn't even do the frosting, but these are the best brownies I have ever made. I will never do another box mix.
