Curried Tilapia with Mango Salsa

I actually omitted the salt because I forgot it--good thing too, the salsa doesn't need it at all.

Banana Oat Bars

These were really weird. I find it really difficult to classify them. They were very moist, but almost wet which was kind of strange. They tasted fine but just... weird. I swapped the raisins for walnuts and I'm glad I did, I can't imagine having even more moisture in them than they had.

Chicken Breasts with Balsamic Vinegar and Garlic

Delicious the night we served it and the next day. Easy to prepare with simple ingredients we had on hand. Guests we served were very impressed, and so was I! Will definitely make again. The flour dredging could probably stay or go, I didn't think it made that much of a difference.

Maple Walnut Pumpkin Pie

More like 4.5, but I digress. Did this with real roasted pumpkin and a homemade graham cracker crust and it turned out great. I would love to find a way to substitute real maple for the imitation (which is all my grocery store has) because the flavor came through as a little artificial. I think with that small change, this attempt could have been much improved. Even still, on the first attempt it won my work's pumpkin pie contest! The topping was a great addition, definitely don't pass on that. Would definitely make again!

Slow Cooker Mediterranean Stew

This recipe didn't really work for me as it was. I used all of the vegetables in the recipe, but exchanged the tomato/sauce for a can of petite diced tomatoes. The consistency was fine (cooked on low 5-6 hours), but the seasoning was SO BLAND. I came home from work to my roommates complaining about the boring crock-pot dinner I'd left them with. After about doubling all of the seasoning and adding some sugar, it was much better. It's also been better as leftovers. Would make again, but definitely need to adjust the seasoning.

Grilled Salmon Steaks with Savory Blueberry Sauce

This was something very fun and different to try with salmon. I took special care to reduce the sauce to the proper consistency and allow the vinegar to mellow and let the blueberries come through--which they did. Though the sauce was delicious and I would definitely try it again, it did seem to be lacking a bit of body. The flavor pops on the top of the palate, but then dissipates pretty quickly with little to savor... not sure how to remedy that but it is a problem I wouldn't mind solving. Served with grilled zucchini and corn on the cob and homemade baking powder biscuits. The roommates loved the sauce on the biscuits as well.

Molasses Cookies

Ginger/molasses cookies are one of my very favorite treats, and I work at a bakery that has really good ones. I am still in search of a recipe that can compete with those, and these aren't bad. I did follow the advice of a few reviewers and halved the soda, and doubled the spices. I think next time I will definitely think about tripling the spices, especially the ginger. I also used melted,unsalted butter which worked great after chilling the dough in the fridge, and baked for 7-8 minutes for a cracked but moist chewy cookie. Will definitely try again.

Fiery Fish Tacos with Crunchy Corn Salsa

The salsa was lovely to look at, but was a little bland. I think cooking the corn and adding black beans would be great, as was suggested. We adjusted the seasoning considerably and it was still plenty hot! The salsa takes a while to prepare, so we might not make this very often, but it is a very yummy fish taco.

Crispy Catfish

Loved this! We also soaked the fish in milk for 15 minutes before breading, and grilled on foil to avoid sticking and it worked great. Fish was moist, tender, and rich. Even the roommate who hates fish liked it, always a good sign. Thanks!

Surprisingly tasty, given how simple the ingredients were. Love this because I had all the ingredients in the pantry except the eggplant. Very easy and satisfying with couscous, will definitely make again.
