Masala-Spiced Roast Chicken

All the flavors blended well together and it made the roasted chicken a lot more exciting than normal. The only things I did differently were to cut up the garlic a bit because my cloves were big and add the lime juice before the garam masala because I didn't want the lime to wash away the spice.

Apple Pan Betty

I couldn't believe how good this was. I don't usually like apple desserts because they get so mushy, but that wasn't a problem with this recipe. Plus it was a great use for my slightly stale whole wheat bread.

I was quite surprised how good these were for being so simple. I let them thaw out a few minutes and it was like eating an ice cream sandwich, albeit a peanut butter flavored one. I used sugar-free instant pudding and they turned out great.

Sausage Cabbage Bake

I really liked how the flavors blended together. I made a few substitutions though. I used 8 oz of vegetarian breakfast sausage, 1 tsp of cajun seasoning instead of seasoned salt, and 16 oz of pureed canned unsalted tomatoes (because the cajun seasoning is really salty.) I also baked it for 45 minutes and the cabbage was still firm. There wasn't a lot of liquid in the baking pan, so I wasn't too worried about it getting mushy.

Welfare Cake

i found this cake to be surprisingly moist and flavorful. i didn't frost it, since we don't like things that are too sweet, and it made a great snack. i really liked it's simplicity, which makes it easy to reduce for smaller batches.

Chocolate Chip Cookies for Special Diets

very light and flaky. perhaps could use some other flavoring, as the splenda i used provides the main flavor. i left the cookies on the sheet after baking for about 10 minutes, and the bottoms were slightly browned and a little bit crispy. as for diabetics not having chocolate chips, there are only about 4/cookie, coming to ~2g of sugar. so unless you have to be very strict, the chocolate chips are ok. and if you have to be that strict, you probably shouldn't be eating this much white flour either!

Broccoli Quiche with Mashed Potato Crust

A nice, low-fat version of quiche. I left the skins on the potatoes, and that turned out well. I also used Yukon Gold potatoes, which are more flavorable. Plus I used non-fat soy cheese for half of the cheese, to reduce fat. I find soy cheese has a better texture than low-fat regular cheese when melted.
