Eclairs II

My 6 year old son asked me to make these, so I made them with him. It was much easier than I thought! We piped the dough through a large freezer bag and did the same with the pudding filling. I had bought light cream and had a hard time getting the firm consistancy, so when I added it to my pudding it came out more runny than I had wanted. I also just used the Betty Crocker chocolate icing (store bought) for the tops and they turned out great. Will make again but hopefully with a firmer filling inside. Overall very easy to do!

Spinach and Mushroom Quesadillas

My husband was nervous about these, but was happily surprised! They had great flavor! I used 3 slices of Monteray Jack cheese for each one instead of the cheddar. I also added sliced Hearts of Palm. EXCELLENT. I will make this again!

Soft Chocolate Chip Cookies II

Instead of using half butter and half shortening, I used a Crisco Butter flavored shortening stick (= 1 cup). These turned out fantastic. I would agree that these are close to the Toll House recipe, but this batch turned out way better. My husband even said so! They weren't flat! (: Thanks for sharing! I will make this again!

Thai Curry Tofu

Finally! I have found a recipe that is easy and tastes authentic! This was delicious with the perfect amount of seasoning...nothing too harsh or spicy at all! I would actually say that there was really no spice to it ! I didnt have fresh cilantro on hand but the grocery sells it in a tube (produce section) and I had that, so I used a few squirts of it......perfect....just perfect. I cant wait to make this again! I served it over basmati rice for my husband and I....we polished it off!

The Tamarind made this dish very tangy...too tangy for our taste. Not sure what could be added to offset that, but I would make it again if there was less tartness.

Crab Cakes II

I didnt use the canned crab, but the fresh kind you find in the plastic containers in the seafood/meat counter at the grocery. I followed everything as is with the exception of two things....I used about 1 tsp of Old Bay seasoning and instead of the crackers, I used two pieces of bread (minus the crust) torn into pieces. I took the suggestion of making the dipping sauce with old bay, mayo and ketsup... Together this was delicious!

Breaded, Fried, Softly Spiced Tofu

I WAS REALLY EXCITED TO TRY THIS. I found it difficult to keep the breading on while frying. Idealy the taste was good, but the presentation was a mess and quite a hassle. Won't try again.

Easy Vegan Peanut Butter Fudge

Super easy and good. I would lessen the sugar though. I found that it really dried out the fudge. I doubled the recipe (following exactly) and put it in a loaf pan. When I cut it it wanted to crumble bc of dryness...still good though.

Candy Cane Fudge

So easy, and good too! My husband LOVES this! It is a softer fudge so I don't recommend trying this in a loaf pan. I made it without the candycane pieces and topped it instead with milk chocolate morsels. I also made a chocolate fudge which allowed for a variety of flavors for my guests....everyone was happy!

Peanut Butter Cookies IV

I made these exactly as the recipe says but took one reviewers advice and put them in my mini muffin pan and topped them with chocolate icing. I took these to work for a function and got raves about how cute and good they were! I must admit, they're easy to eat and hard not to eat a half a dozen at a time! I plan to make these again for a friend's cookie exchange this weekend.

Easy and so great for fall. I followed this recipe just as is....but added pecans to the top of them to offset the sofness of the cookie...then drizzled with a confectioners sugar icing. Delish!

Almond Broccoli Stir-Fry

I was looking for something simular to this and decided to use the sauce recipe with what I had on hand. I made the sauce as directed, stir fried a bag of the carrot and broccoli cole slaw (bought in a bag in the salad section of the grocery) then added a cup of brown rice and tossed. I also stir fried some strips of steak as a topper. Came out pretty good! I didnt add the almonds. I bet this would be good with broccoli!

Pistou Soup

This soup has great flavor. I too used chicken broth because it's what I had on hand and added the zucchini with the pasta. I only had the parm. cheese so I didnt use the other...Still good! I wonder if the olive oil could have been less...I think probably so if you want it to be even healthier. Overall this is a good one!

So good and so easy! I just used the cheese sticks and some garlic powder so there would be flavor but not too much for my kids testy tastebudds. My husband even loved them! In a matter of minutes they were done....gotta love that on a weeknight!

Marinated Grilled Shrimp

Good and easy! I've made this several times. I thought the idea of using katsup instead of opening a full can of tomato sauce was a good idea (and still tasted great). I've tried it both ways and both are good. I also use dried basil instead of fresh.

Lemon Cream Pasta with Chicken

This is a good recipe. After reading some of the comments this is how I made it: I followed the recipe for the noodles and the sauce. I cooked a whole box of mini penne pasta for 10 minutes. I sauted asparagus spears, fresh mushrooms and frozen grilled Tyson chicken strips and then added them to the pasta. I think I also added a little garlic salt. I made this for a dinner party and it seemed to be a hit. I do think I will make it again. The asparagus was key!
