All American Apple Pie

I made this GLUTEN FREE and it was awesome. I followed the recipe and replaced "flour" with Bob's Redmill baking mix and added 2 tsp of xanthan gum. The crust was easy to work with, which is unusual for GF dough, I did use less sugar on the apples, and used brown sugar in the crumb topping. I did need to cook it about 30 minutes longer to get the top to brown and cook. The crust stayed together nicely and was easy to cut a peice of pie and remove it. I will use the crust recipe for other GF pies.

Slow Cooker Texas Pulled Pork

I have tried other pulled pork recipes and didn't like them at all. This recipe is awesome. The change I made was to add only 1/4 cup of vinegar instead of 1/2 cup. I was afraid that it would be too much vinegar. I used a pork tenderloin to cut down on the fat. It was great and I will make it again.

Slow-Cooker Chicken Tortilla Soup

Awesome and easy! Ingredients I always have on hand. Only thing I don't keep on hand is canned tomatoes with chilies. I used a 16 oz. jar of salsa. Even my kids liked it. I followed another reviewers idea and made my own taco mix. Much less sodium.

Greek Seasoning

This has a great flavor. I sprinkle it on boneless skinless chicken tenders. Cook in olive oil until done. Put chicken on pita bread spread with hummus, add lettus, tomato, and cucumbers. I drizzle greek salad dressing or balsamic vinigrette over the ingredients. Wonderful!

Crispy Rosemary Chicken and Fries

I used boneless skinless chicken thighs. Marinated the chicken in a little olive oil, several dashes of worchestershire, tbsp of lemon juice, oregano, rosemary, garlic powder, and pepper. I didn't measure I just sprinkled it in. Followed the rest of the recipe. Great! The kids liked it and they normally don't like chicken. I did roast the potatoes for 20 min and added onions to potatoes, then added chicken and cooked an additional 45 min.

Greek Pasta with Tomatoes and White Beans

I used 1 pound of high protein pasta. I used a bag of fresh spinach that I wilted by pouring the hot pasta water over the spinach. I used fresh tomatoes in place of canned. In addition I poured basil balsamic good seasons salad dressing over the mixture. Awesome!
