Sopapilla Cheesecake Pie

This is one of the most delicious desserts I've ever made. It's so good, and so easy, that I find myself returning to it again and again, often at the request of friends and family! I usually halve the recipe and cook it in a 9x9 pan, use regular vanilla, and add sliced almonds on top. Fantastic!

Easy Chocolate Crackled Cookies

These cookies are incredibly rich--almost too chocolaty! As other reviewers have said, it really is necessary to refrigerate the dough for 1-2 hours beforehand--it's extraordinarily sticky. I used margarine instead of shortening, and it turned out just fine.

Raspberry Fudge Balls

These are tasty, but sticky and very melty. I found they're best kept in the freezer and eaten straight out of it (they don't freeze through). These aren't a good gift food or cookie-tray type food because they become gooey and smushed after just an hour or two after removing from the freezer. But they're a great treat to keep around the house.

Cowboy Oatmeal Cookies

Delicious! As seems to be the norm, I upped the oats to 3 c. and added 1 tsp. vanilla. Next time I will try using cinnamon chips!

Mediterranean Lemon Chicken

One of my favorite chicken recipes--it turned out beautifully. I used boneless breasts and lowered the oven temp to 350 as suggested by another reviewer, and the chicken was perfectly moist. Love the oregano flavor with the lemon.

Apple Cake V

Easy Pumpkin Muffins

These are wonderful! I can hardly believe they were so easy. I substituted pumpkin pie spice for all the spices, added about 3/4 c. walnuts, and sprinkled brown sugar on top. Absolutely delectable.

Peach Pork Picante

This has quickly turned into one of my favorite dinner recipes. The easy to delicious ratio is fantastic. I like a little less salsa and a little more peach flavor, so I use 2/3 c. salsa and 5 tablespoons peach preserves. I also like to add a chopped green pepper to the mix for some added flavor and healthfulness.

Cream Cheese Bars I

This is a 4-star recipe when the bars are warm, and a 5-star when they're cold. DEFINITELY serve these straight from the fridge! I like using lemon cake mix best.

Rhubarb Strawberry Crunch

Fantastic! I used the filling to crust ratio as written and thought it was fine. I did reduce the sugar to 3/4 c., and added some cinnamon and vanilla to the crust for a little added flavor. Marvelous.

Two Step Creamy Cheesecake

I was nervous about this one, thinking there was no way some cream cheese, sugar, and Cool Whip thrown together could taste all that great, but I was wrong. This is a great summer recipe, though I did as other reviewers recommended and halved the whipped topping. I also added a splash of vanilla.

Almond Rhubarb Coffee Cake

This is amazing! I only wish I'd had more rhubarb--I was only able to use 2 c. I adore the topping though, and will likely use this on other cakes and muffins as well. Following the advice of other reviews, I subbed applesauce for half the oil and left the nuts out of the batter. I also added a dash of cinnamon to the topping, to give it a little extra kick. Delicious! I'm tempted to eat it all myself. ;)

Rosemary Chicken with Orange-Maple Glaze

Best. Chicken recipe. Ever. I'm a poor grad student, so I used just about every cringe-worthy substitution you can imagine (cheap cooking wine, dried rosemary, fake syrup, margarine...), and this still turned out better than almost any other chicken recipe I've tried, and it's easy to boot. The glaze IS very thin--I've tried thickening it with corn starch with limited success--but the flavor is phenomenal.

Dad's Steak Rub

This was tasty and easy. I hate having to prepare marinades in advance, so this gets bonus points for being a quick rub that can be thrown together last minute. I didn't have fresh garlic on hand, so I used about half the amount in garlic powder instead. I would cut down a bit on pepper next time, as it was just a little too strong.

Banana Pumpkin Bread

Yeah, okay, I had to bake this for an hour. But who cares? The taste is AMAZING. Instead of raisins, I added 1/2 c. chocolate chips, resulting in some pretty awesome chocolate chip walnut banana pumpkin bread--pretty much all the best quick breads in one. Somehow I ended up with more batter than would fit in a single 9x5 loaf pan though, so I filled up a few muffin cups with the leftovers. I baked the muffins for 40 minutes and they still came out a little overdone. The bread is definitely the winner here.

Famous Pork Chops

This has quickly become a staple meal for me. I love it because it's something you can throw together at the last minute. I love adding a little grated parmesan and dried parsley to the cracker mixture, and per other reviewers I bake covered for 25 minutes, then uncovered for the remaining 20. If I have extra crumbs, I add those on when I uncover the dish--this, along with the uncovered baking, helps alleviate any sogginess. I also use only teeny tiny slivers of butter--you definitely don't need nearly as much as the recipe calls for.

Cinnamon Coffee Cake II

I made this recipe as written, and it came out delicious but a bit on the sweet side (and I am not a person who frequently complains of things being oversweet). I think all that brown sugar is the culprit--next time I will try reducing to 3/4 c.
