Baked Tofu Bites

I am having a hard time even giving this two stars. I followed the pattern, except I reduced the amount of soy sauce by half based on everyone else's comments. It was still waaaaaay too salty! Even if it hadn't been salty, I still think it would have not been good. I will NOT make this again! I should note that I let it marinade for a few hours. Maybe if I had only marinated it for five minutes, it might have absorbed less salt. The recipe says to marinate for at least five minutes, maybe it should say for no more than five minutes? Still, I don't think I'll try this again.

Tofu Stroganoff

This was great! My husband didn't know exactly what it was but said it tasted a lot like stroganoff! I added more garlic, less tofu, and some other spices to liven it up a bit. We'll definitely make this again!

Rocky Road Popcorn Balls

It was delicious! It took about five minutes from start to finish. I'm allergic to peanuts, so I left them off, and I added a half a bag of milk chocolate chips instead of the 1/2 cup. Everyone loved it. Actually, I think it's too good. I ate three large balls in a row. :-/

Pretzel Turtles

My four year old helped me with these. I can't believe how quick and easy they were to make, plus delicious!!! I used honey roasted almonds instead of pecans. Will be making these again and again!

Chocolate Yule Log

This is a very rich and delicious cake. I did have a few problems though. I added less coffee than was indicated, thankfully. I also didn't add any coffee to the frosting mix. The cake broke apart when I rolled it. I followed the instructions PERFECTLY, so I'm not sure what went wrong. The filling sort of held it together, but when I put the frosting on, which was super thick, it tore up what was left of the cake. It looked terrible, but tasted delicious!

Meringue Mushrooms

I did everything wrong and these came out AMAZING!!! I live in Oregon, so needless to say, it was humid. I also didn't have a pastry bag, so I used a ziploc with a small cut in a corner to squeeze out my shrooms. They came out PERFECTLY! I was blown away. They fooled two guests into thinking they were real, raw mushrooms. I placed them in a cardboard fruit basket from the farm. The only changes I made are that I doubled the vanilla (on accident, but it was a good accident) and I froze them when they were done to prevent the humidity from destroying them. It worked!

Easy Egg Drop Soup

Great soup! Super easy and quick to make. I followed the recipe exactly and my husband and picky eater boys all loved it. The whole pot lasted about ten minutes. I only give it four stars though because I think it could use a few other ingredients. Next time I'll try adding a bit of ginger, some tofu, and lemongrass.

Blueberry Pie

I've never eaten or made blueberry pie before, but this pie is absolutely the best pie ever! I followed the recipe except that I added 5 tbs cornstarch instead of 3. Also, I used a full pie crust on top, coated it with a beat egg, and sprinkled with raw sugar (the big chunk kind). It was PERFECT!

Blender Hollandaise Sauce

This was DELICIOUS! And super easy and quick to make. The reason I only gave it four stars is because it was too thick, but that might be because I used fresh eggs which are a bit denser. I made this for an Easter brunch and everyone was super impressed!

Vegetarian Ribs

These were AMAZING! My carnivorous husband said it was the best vegetarian food he's ever eaten in the 16 years we've been together. The only thing different I did is used sunflower butter instead of peanut cause I have an allergy. It only took about ten minutes to prepare.

Never Enough Green Bean Casserole

This was fantastic! I served it for Easter dinner and it was a big hit, even among those who claim not to like green beans. The only thing I did different was add smoked Gouda instead of velveta and left out the bacon.

Herbed Dumplings

This was fantastic! Absolutely no leftovers. There were too many herbs. I read the reviews a few days ago and forgot that people had suggested reducing the herbs and salt (mine weren't over-salted). They were super fluffy! I used buttermilk instead of milk and replaced 1/2 cup flour with whole wheat flour. Will definitely make again!

The Best Unbaked Cherry Cheesecake Ever

This was fantastic! I made two for a small dinner party last night and there aren't any leftovers. One guest had four slices and then told me that he could sit down and eat a whole one by himself. I followed the recipe exactly, except that I added more vanilla and some lemon juice.

Blueberry Zucchini Bread

This is the BEST zucchini bread ever! My husband hates zucchini and zucchini bread. He rolled his eyes when I was making it. I had to practically force him to try it and he LOVED it! I even forgot the blueberries (too many kids, lol) and it was absolutely perfect! The only changes I made were that I used raw sugar and 50/50 flour (half wheat, half unbleached). Super moist and sweet. It made quite a lot, but sadly it's all gone. Time to make more!
