Mary's Sugar Cookies

These were only ok (we still ate them of course, they are cookies afterall!). But I felt like they weren't all that great by themselves and really relied on the frosting to make them yummy.

Shepherd's Pie

YUM! I altered just a bit. I made the mashed potatoes with a bit of cream cheese, milk and garlic. I put a small layer on the bottom of the pan before the meat went on. For veggies, I used a carton of fresh mushrooms, a can of carrots, a can of corn, and half a bag of frozen peas. I also sauteed an onion with the beef. After the meat and remaining potatoes were added to the dish, I sprinkled 1/2 pound of cheddar cheese on top. Delish!

Fragrant and Healthy Carrot Cake

These were exactly what I was looking for! I altered the recipe a bit...1) I didn't add the carob powder, 2) I used honey instead of molasses, 3) I used about 8+ black mission figs (since they are small), 4) I omitted the poppy seeds, and 5) I used applesauce instead of oil. I also baked them as cupcakes (about 30-35 minutes at 350). Yum!

Chewy Chocolate Chip Oatmeal Cookies

Fantastic cookies! I might add a tsp of cinnamon for variety to this recipe though, just on occasion. We cut the salt in half as others suggested. Also, we upped the temp to 350, because it was taking too long (>15 minutes) at 325.

Homemade Black Bean Veggie Burgers

These were delicious!! I made as directed, except I added a bit of salt/pepper and pan fried rather than baked. Also, splitting into 4 patties was way too big (too big for a bun) so we just ate then bunless. They were still delicious, but if you need a bun, ten split into 6 patties I think will work better.

Fettuccine with Sweet Pepper-Cayenne Sauce

This was super easy to make and it was good! I added adobo pepper instead of cayenne and mexican cream instead of sour cream (less tang). I would definitely make it again, but I might throw in a bit of cayenne for spice (since the cream takes it away) and no cheese (it just didn't add anything for me).

Zippy Barbecue Sauce

This is a really good sauce. I made it just as described, except I used a bit of cayenne pepper instead of tabasco (no tabasco sauce in this house!). I am really looking forward to having it tomorrow!

Curried Quinoa

The recipe as it is written would be a great side dish, but to make it more of a meal I added the following at the end (without cooking): 1) 1/3 C sliced almonds 2) 1/2 cub sliced celery 3) 1 diced mango 4) Hubby added chicken. I also added less ancho powder as others had suggested (about 2 tsp) and omitted the salt and pepper. Was delicious!!

Spaghetti Sauce II

Great sauce. We are making this for eggplant parmesan tomorrow night (so we will know more then). So far, it has a great flavor and consistency. We changed a few things: 1) I sauteed the onion and garlic, then added the wine and simmered down. 2) Set aside the onion mixture and 3) we used fresh tomatoes from the farmers market (two big brandywines and two incipid store-bought romas). I sliced them up, threw them in a pan with a little olive oil and then crushed with my potato masher. 4) as others suggested I halved the green spices and it was plenty flavorful, 5) I used only one can of tomato paste.

Delicious Ham and Potato Soup

This has become THE recipe for potato soup in our house. I change just a few ingredients to make it more our style. 1) I add a can (or cut raw) corn instead of celery. 2) I use maple deli ham (usually what we have in the house).

Sloppy Joe Sandwiches

Fantastic recipe! I doubled it and had to alter a few things, just because of what was in the pantry. I ran out of ketchup (had less than 1/4 cup) so I used 3 medium tomatoes and crushed them up with the potato masher. I added a bit more sugar than the recipe called for to make up some of the sweetness, but it still wasn't as sweet as full ketchup would have been. I also added about 1/2 of a red onion all died up to the meat when browning and we used ground venison (which was delicious!!).

Carolyn's Oh-So-Easy Cherry Cobbler

Very easy to make. I made my own pancake batter (without the wet ingredients), used the cherries I canned from last year, and had to add a bit more milk than the recipe called for (maybe 2/3 c). I also added a few drops of almond extract, because cherries should always accompany almonds. ;) It is in the oven, so we will see how we like it later! edit: This was fantastic!!

Tomato-Curry Lentil Stew

I had to make a few alterations to the recipe. I doubled it. However I made the following adjustments: 1) I used about 3.5 cups of chicken broth, 2) a can of Italian seasoned tomatoes (didn't have anything else!), 3) a medium onion diced, 4) three cloves of garlic, 5) a whole teaspoon of curry powder (and I think it may need more), and 6) omitted the celery (didn't have any).

Lentil Loaf

This was decent (Hugo liked only the first night...then he said it was gross). I made it pretty similar to the suggestion, except I forgot to add tomato paste/ketchup, and I used bread crumbs instead of bread. If I make this again it will need some more tweaking to spice it up a bit.

Channa Masala (Chickpea Curry)

This was VERY good. I made more or less the same as instructed, except I used cumin powder instead of seed and didn't blend together into a paste (it was good chunky!). Make sure to add the cilantro as a garnish, it definitely adds flavor to the dish.

Lasagna Roll Ups

This was great! We added two eggs to the mixture as well as fresh mushrooms, onions and spinach. For half of them we added sausage (not my half!). I didn't add quite as much cheese as the recipe called for and didn't miss it one bit!

Brown Sugar Meatloaf

I don't know if I was just in the mood for this or not, but it was just wonderful!! I will totally make this again. It isn't that different than the "wing-it" version, but it is also nice to follow a recipe to make sure it is good. Next time I think I will just put the ketchup/sugar mix on top of it, because I like it a bit browner.
