Spinach and Artichoke Dip

Um delish! And an easy recipe for the kids to help make too. I used a bunch of fresh spinach (cooked first) and added a few cloves of garlic.

Ethiopian Cabbage and Potato Dish (Atkilt)

Reviewed: Jun. 16, 2014
This was good and easy! Four stars, because it is a tad bland. We didn't have carrots, so I used a cup of garbanzo beans, and I also didn't have ginger so I just left it out. Was very good and would make again!

Fresh Asparagus Soup

This was sooo good. I added about 1/2 tsp cayenne pepper as well when I made the roux, because we like it a bit spicy.

Slow Cooker Creamy Potato Soup

Reviewed: Mar. 23, 2013
This was super good! I did change a bit. I added about 7 small yellow potatoes and half a head of cauliflower. Because it was so much more potato, I had to add lots water and spices. Loved the dill in it! I didn't add half and half or evaporated milk, but did a small rue and added that with regular milk. Then after it was all done, I mashed it up a bit before serving with cheddar cheese and homemade biscuits. The cauliflower was amazing in it!

Mayonnaise Biscuits

These were amazing. The batter is super sticky a it is, like very think pancake dough. But just go with it and drop them onto parchment paper and they fluff up and are amazing. Don't change a thing!!

Mushroom Risotto

Reviewed: Dec. 4, 2012
Authentic or not, this was amazing. I did add some mushroom flour from morells we picked (maybe a T or so) and also a dash of nutmeg. I only needed about 4 C of broth for a double recipe.

Pumpkin Bread IV

Reviewed: Sep. 30, 2012
This is delicious, but I was expecting something bolder. The flavor as it is written is very mild (I did add pumpkin pie spice instead of all three spices, but I don't think that would change it). I think next time I would double the spices.

Delicious! Made them sort of small, so there were lots! Sort of chewy like a small bite of brownie.

Mary's Sugar Cookies

These were only ok (we still ate them of course, they are cookies afterall!). But I felt like they weren't all that great by themselves and really relied on the frosting to make them yummy.

Shepherd's Pie

Reviewed: Nov. 6, 2011
YUM! I altered just a bit. I made the mashed potatoes with a bit of cream cheese, milk and garlic. I put a small layer on the bottom of the pan before the meat went on. For veggies, I used a carton of fresh mushrooms, a can of carrots, a can of corn, and half a bag of frozen peas. I also sauteed an onion with the beef. After the meat and remaining potatoes were added to the dish, I sprinkled 1/2 pound of cheddar cheese on top. Delish!

White Chocolate Macadamia Nut Cookies III

These were too cake-y for us. I mean they were good, but not fantastic...sort of like toll-house. I probably won't make them again.

Fragrant and Healthy Carrot Cake

Reviewed: Jul. 2, 2011
These were exactly what I was looking for! I altered the recipe a bit...1) I didn't add the carob powder, 2) I used honey instead of molasses, 3) I used about 8+ black mission figs (since they are small), 4) I omitted the poppy seeds, and 5) I used applesauce instead of oil. I also baked them as cupcakes (about 30-35 minutes at 350). Yum!

Chewy Chocolate Chip Oatmeal Cookies

Reviewed: Mar. 17, 2011
Fantastic cookies! I might add a tsp of cinnamon for variety to this recipe though, just on occasion. We cut the salt in half as others suggested. Also, we upped the temp to 350, because it was taking too long (>15 minutes) at 325.
