Coconut Shrimp I

Followed the recipe as written but it was way too thick. I ended up adding more beer to thin it out. Next time I definitely need to add some spices and try using rum. The recipe as written is only ok.

Best Guacamole

I will go back to using lime juice instead of lemon. Missing the garlic, tomato, and cilantro. Good, but not the best in my book.

Potato Casserole

I loved this casserole. I combined the hash browns with the cheese/sour cream/soup and only used a pat of butter to saute the onions. A stick is way too much. Same for the corn flakes, just enough butter to coat the corn flakes before putting them on. I also had to cook at a lower temp to accommodate other items in the oven, but it wasn't even an issue.

Spooky Witches' Fingers

Took alot of advice from the reviews. Green food coloring, choc chips for warts, toasted the almonds, dollop of red jam on the plate at the end of each finger. What a hit! Some people couldn't eat them they looked too real, but there weren't any left to take home.

Awesome Honey Pecan Pork Chops

I added a couple TB of broth to the honey and nut mix, it seemed too thick. The overall flavor was sweet, but not too sweet. I finely chopped the pecans which gave the meat an even coat of nuts but a 1/4 cup was plenty. Everybody loved it.

Taco Pasta Salad

Made it at home on a trial run following it exactly as written. The flavor was only OK and the combination of lettuce and pasta was weird. Overall it had a messy appearance. I made it a second time and added Franks hot sauce to the meat, eliminated the lettuce, and used ranch instead of catalina. The flavor was much better. I tried to layer the ingredients to make more attractive: meat/pasta mixture, ranch dressing, tomatoes, cheese, green onion, and pepper and added black olive. I thought it looked much better that way. I still ended up bringing alot of it back home with me. I won't be making this again.

Seafood Pasta Salad

Skipped the peas and added green onion and extra celery. Had to add extra dressing after chilling because I like it creamy but a great basic recipe that you can get creative with.

Sweet Restaurant Slaw

Made the dressing as listed minus the poppy seeds. Excellent! Made the dressing the night before and mixed with the slaw the morning of the party which worked great. But leftovers were even better, I should have mixed it all the night before!
