Black Bean Rice Burgers

Reviewed: Apr. 7, 2011
amazing! added breadcrumbs, 1/2 C, as suggested by other reviewers. we are dairy-free, so we used a spicy light-mayo instead of dairy, and sandwiched the burger between two corn tortillas, as to reduce the carbs.

Pasta with Thai-Style Chicken

Reviewed: Apr. 4, 2011
doubled everything except for the pasta and green beans, and cooked it all in the slowcooker. cooked frozen chicken on high in the sauce for four hrs, and then on low for two. threw in frozen green beans in the crockpot towards the end. the fresh ginger really makes this one. ran out of coconut milk, so used 1/2 coconut and 1/2 almond milk. recommend using 1/4 the amount of pasta, half the amount of green beans, and half the amount of the milk/sauce mixture (although hubby loved drinking it) Next time, I would add an extra tbs. of lime to enhance the citrisy-flavor. Thanks for sharing.

PBM Sandwich

i have not had one of these in a while, since i have been more health conscious. however, i would reccommend using the strawberry fluff with natural peanut butter and to use sprouted whole-grain bread.

Made-in-Minutes No-Cook Fudge

Reviewed: Mar. 31, 2011
coconut oil can be tricky. to help it blend smoothly and reach the ideal consistency, blend it with the cocoa using a double broiler, or blend in a saucepan above a skillet full of heating water. when done, then add in RAW unheated honey. cocnut oil is great than in heating it this way it still retains its properties, the honey is the ingredient that does better raw, b/c heating it or buying it heated ruins its health benefits.

Baked Oatmeal Squares

Reviewed: Mar. 13, 2011
Great! We wanted to go as low-fat and healthy as possible. So, we skipped the nuts and doubled the raisins, used agave instead of sugar (only need 3/4 as much agave asm sugar), skipped the oil minus the amount to spray the pan.

Alex's Raw Chocolate Pudding

Reviewed: Mar. 13, 2011
We were very reserved about trying this one, because who would ever think about avacado and banana in the same dish. It turned out great!! We used light coconut milk instead of the soy since soy is not Dr. Axe approved. This truely made it no-guilt!

after reading the other reviews, & making this i did the following: added 1/2 le,mon (the most important) added a ton of dry dill, used mayo instead of milk & sour cream, added onion powder, dry mustard, & added paprika and chili powder by default b/c they were already in my only mayo. makes a pretty dish!

Mushroom and Chicken with Sour Cream Soup

Reviewed: Mar. 1, 2011
very good. we made some modifications, and turned it into a slowcooker recipe. we used almond milk and no sour cream. we also used two thawed chicken breasts, tripled the amount of tarragon, and threw in a pack of frozen spinach. also, we used two cans of chicken broth instead of the beef bouillon and water. cooked on low for 6 hrs.

very colorful and tasty! You can modify the salad dressing to your taste. The pictures do not do it justice, b/c it looks even better in real life. Dr. Don Colbert approved.

Amazing Hawaiian Chicken Chili

Reviewed: Feb. 9, 2011
Alo-HA! great idea! just dumped everything including, frozen raw chicken ,into the slow cooker. used taco sauce instead of bbq sauce; we lllooovvee bbq sauce, but dr.colbert doesn't recommend it due to the high level of stealth sugar. used regular hot salsa, so we added paprika to give it more of a smoky flavor. next time, we'll add an additional can of pineapple tidbits with the juice.

Emily's Famous Popcorn

Reviewed: Feb. 5, 2011
I never thought healthy popcorn could taste so good. It's almost like eating barbeque chips without the guilt. Brewer's yeast is always a great add-on. This is the only way, besides tomato-based soups, that we have found brewer's yeast to even be mildly palatable.

Green Bean Fries

Reviewed: Feb. 5, 2011
Excellent and very good. i love fried foods that some type of nutritional value. To make a lower carb version, I put 3 heaping tbs of flour on the green beans after drying them, then I added 3 heaping tbs of bread crumbs. I then added the egg on top. Hand-mixed then pan fried in coconut oil (a healthier oil.) Definetly a keeper recipe!!!

Puppy Chow II

Reviewed: Feb. 4, 2011
I made this with a 3-year-old preschool class. I skipped the pb to avoid allergies. This is a great kid-friendly recipe!!! I gave each child a baggie with the squares covered in chocolate. Then, I dumped powdered sugar in the individual bag and let the children shake them up!
