Sweet Potato Pie I

This was my first sweet potato pie, and wow! I followed the recipe for the pie, and it turned out beautifully - although I can see how adding two tablespoons of flour might help the filling to set better. I did add a Caramel Pecan topping to the pie before baking. It turned out like a dream: Caramel Nut Topping (from cooks.com) 1 c. chopped pecans 1/4 c. butter, melted 1/4 c. light brown sugar This pie will be a new family tradition.

Sweet Potato Cranberry Bake

This was surprisingly delicious dish. I followed the recipe exactly (using fresh cranberries), and it turned out beautifully. Although, I think I should have boiled the sweet potatoes about 5 minutes less. This is a fantastic dish to serve with coffee or tea at the end of hearty Autumn meal. I suggest doubling-to-tripling the topping, though, to cover the whole dish.

Chicken Pot Pie IX

Excellent recipe. I followed it to the letter and it turned out beautifully. Definitely better than any cream of chicken soup pot pie I've tried in the past. Two pies gone in two days!

Wow! I LOVE this salad. Beautiful Autumn flavours. Remember to use sweetened cranberries rather than fresh ones, or your lips will pucker :)

Pecan-Crusted Pork with Pumpkin Butter

Excellent! I'll definitely make this again next Fall, but with just a hint less cinnamon. My husband said it was the best pork breading he's ever tasted. We served this with a Harvest Soup entree and Harvest Rice side dish, along with a Sweet Potato Cranberry Bake and Sweet Potato Pie for dessert. Beautiful Autumn feast :)

Butternut and Apple Harvest Soup

Excellent. Definitely a keeper. I followed the recipe to the letter, and it turned out beautifully. I swirled some heavy cream into the top of each bowl prior to sprinkling fresh chives for a lovely presentation.

Crustless Spinach Quiche

This quiche has a very unique flavour; not for those who don't appreciate spinach. Lovely with the Muenster cheese and easy to make. However, where we are Muenster is very expensive, and I don't think this recipe is quite amazing enough to warrant the cost. Perhaps with a different cheese, though.

Baklava

This is the first time in my life that I baked and said WOW! I mean WOW! Absolutely the nicest dessert recipe I've ever found! We used almonds in our batch, and in the last month we've made it 3 times. My father-in-law even swiped pieces from others' plates when they weren't looking! You've got to try this! A tip - I used an electric knife to cut the Baklava it small rectangles and it worked really well. We put the finished pieces into the rectangle cup cake holders (what are they called?!) and they even looked amazing!

Quiche Lorraine I

Well, I followed the recipe exactly, and it was straight forward enough. It took considerably longer to bake, though, than in the directions here. Make sure you like Swiss cheese a lot before making this one. Only one person in our family ate it (I actually spit mine out), and he said it was so-so.
