No Skill Fruit Tart

Scored MAJOR points with the new boyfriend for this fruit tart! The crust got the most compliments and looked so pretty in the rippled tort pie pan I found at IKEA. Perfect recipe! Will make AGAIN and AGAIN! I used an electric mixer. I also did not fold the dough up over the fruit but instead pressed it into the ripples of my tart pan. Baked the night before and served for dessert the next night and breakfast the day after! Used blueberries, raspberries and strawberries. Heavenly!

Beer Batter Fish Fillets

Awesome! We make these almost every week in our house! So delicious and sometimes even tastier as a left-over on a sandwich! I make a tartar sauce to accompany the fish, but it's tasty on its own too! Yum!

Garlic Rosemary Mashed Potatoes

Yum! I substituted the evaporated milk with 4 tbsp of light sour cream. Absolutely delicious! Even my man who prefers "plain mashed potatoes" ate every last bit of these potatoes!

Basil Sugar Snap Peas

Quite tasty! I prepared the sugar snap peas with a splash of water in a small pot on the stove, then added everything else in and stirred it up. I also used sliced olives with red pimentos instead of straight-up pimentos! Really delicious! Went great with lobster thermidor and garlic mashed potatoes!

Outstanding! Made this bread with organic soy milk but otherwise stuck to the recipe. Had to halve it, but still managed to get two delicious loaves. Perfect Easter bread! Takes me back to my Polish great-grandmother's bread and my Easter in Ukraine!

Grilled Tilapia with Mango Salsa

Used this recipe just for the mango salsa. Mmm!I used dried cilantro and skipped the red onion. I also added tomatoes and extra green bell peppers. Very colorful! Yummy as a chip dip or a topping to the fish tacos I made! Mango was a pain to work with, but I would definitely do it again!

Fish Tacos

Used this recipe for the white sauce. Daaaang! Delicious! I skipped the may o and used 1 whole cup of plain non-fat Greek style yogurt. Added a little extra dill and a tsp of minced jalapenos. So yummy! So light and refreshing! Perfect on the hot fish tacos!

Sam's Famous Carrot Cake

Modified recipe but best carrot cake I've ever made! Used vanilla soy milk instead of buttermilk. Skipped walnuts, coconut, raisins and pineapple juice. Substituted half the flour with soy flour for extra protein. Delicious and nutritious! Was a hit with me and my man!

Florentine Artichoke Dip

Spicy Oatmeal Cookies

Tasty little cookies high in fiber and healthy fats. These were gobbled up crazy fast by my gym nut boyfriend! Super easy to make! Great alternative to banana bread for those less-than-ripe bananas.

Meatball Nirvana

I can't stop making this recipe! To die for! So delicious! I always double it with the intention of freezing some, but they never make it to the freezer! I skip the worcestershire sauce and add more crushed red peppers. Spicy! Delicious in spaghetti, on a roll or on their own!

Delicious Salmon

This salmon really surprised me! So delicious! I followed the recipe though took the advice of a reviewer and a tbsp of crushed ginger. Wow! Dynamite! Served with roasted black sesame asparagus and a tomato/bell pepper/feta salad for a healthy, tasty meal!

Cream of Fresh Asparagus Soup I

Excellent soup! Best I've ever made! I vegan-ized it by substituting vegan butter and unsweetened soy milk. So tasty! I added some extra dill and black pepper instead of white. Also I skipped the Tamari. Wow I really modified it a lot, but the result was so tasty that it's worth mentioning!

Beer Batter Fish Made Great

Delicious! I make this every other week! Torn between this and another beer batter fish recipe on here; they are both tasty. I actually like this one better because I can omit the milk, add more spice and more beer. Simply delicious!!
