Easy Chicken and Broccoli Alfredo

I followed the recipe exactly and we just didn't like it. The texture was too heavy, as cream cheese sauces tend to be. The sauce was very tangy, and not in a good way.

Cauliflower and Broccoli Bake

Followed other reviews and reduced milk to 1 1/2 cups and cooked the broc/caul in the microwave for 5 minutes. I added sliced smoked sausage and panko crumbs and olive oil to the cheese before sprinkling on top. Pretty good recipe - ONLY IF you reduce the milk. I would also be careful about the cooking the veg too well before - mine was just on the edge of mushy and I cut them in pretty big chunks. Even with 1 head of broccoli and 1 head of cauliflower and the added sausage, there was still lots of extra sauce. Next time I may add some cooked macaroni for a one-dish meal. I definitely recommend adding panko to the cheese on top - makes a nice, crispy crust. Will make again.

Chicken Chimi in the Oven

I make this as is sometimes (always add cheese and never puree, though) and sometimes I take the quick route and just make as quesadillas. Instead of brushing with oil, I use cooking spray. For a good dipping sauce, mix together some sour cream and taco sauce. Reheats well for lunch the next day. During the last month of my pregnancy, I made these like a pan of enchiladas and froze for a reheat-and-heat meal after the baby was born. There are a lot of options with this recipe!

Sloppy Joes I

I hate sloppy joes, but my husband loves them. I have tried many recipes looking for one I could stand, and I have to say I actually like this one. I have made this several times and feel no need to make any changes. Not overly sweet, not overly tangy, not overly saucy - just right!

Lemon Mushroom Herb Chicken

I have been making this recipe for years. I cut the flour mixture in half and never use the capers or parsley. I like this over rice, my husband over noodles. The chicken always turns out juicy and tender. Try this one - it is yummy and easy!

Fettuccine with Sweet Pepper-Cayenne Sauce

I have been making this recipe for about 8 years. I follow the recipe exactly and just add chicken with cajun seasoning. I have also added mushrooms and/or zucchini from time to time. One of my family's favorites. Don't worry if the sauce looks a little thin at first - it thickens well when you add the Parmesan.

Quick and Almost-Professional Buttercream Icing

Made exactly as directed. One of my beaters broke while making the cupcakes, and I had to make by hand, so didn't turn out as fluffy as I would have expected, but the flavor is perfect. This frosting is just sweet enough and light. It might sound weird, but it has a 'clean' taste to it. I think this frosting would also work very well for cookies. This is my new favorite frosting!

Almond and Baby Bok Choy Asian Salad

I probably shouldn't review this recipe, since I made quite a few changes, but it's such a good jumping off point. I didn't have sesame seeds, so I used 1/4 cup canola oil and 2 T sesame oil, 1/4 cup rice vinegar, 3 T soy sauce and 1 T red cooking wine (no mirin). I also added grilled steak (marinated for 15 minutes in the salad dressing), yellow pepper and mandarin oranges. Very good!

Shrimp Versailles

Kind of like a creamy shrimp scampi. I added mushrooms and stirred in some linguine noodles before broiling. I didn't use the bread crumbs, but Parmesan instead. I will make again, with maybe a T or two more of milk or a little less cream cheese.

Chicken Fiesta Salad

This is my new favorite salad! The only thing I changed is I used regular corn, added some shredded cheddar and didn't put in the onions. I sent this recipe to my mom and she and my dad loved it, too! It made about twice the beans and corn that my husband and I could eat, so I froze the extra and made the salad again the following week with more chicken etc. My husband, who hates salads, actually liked this recipe, too!
