Fresh Grapefruit Cake

Reviewed: Aug. 27, 2009
Good when you make a few changes. I had several fresh grapefruit I needed to use up so I used my juicer and added all grapefruit juice and no milk. I also put in about half a grapefruit finely diced into the batter. It added the perfect tangy kick and really tasted like grapefruit. I also made a glaze of powdered sugar and grapefruit juice to drizzle over it. Made a flavorful cake with the changes!

Baked Shrimp with Feta and Tomato

Reviewed: Jan. 22, 2009
I have made this twice now. The first time I made it exactly as it was written and served over linguine noodles - it was wonderful! The next time I added diced green pepper and diced onions at the same time as the garlic. I cooked until soft. I found I was out of feta and so used grated parmesan. Served over rice and it was a wonderful and filling dinner. Kids liked it better with parmesan (they aren't fans of feta!). Highly recommend as a quick and filling meal!

Pork and Cabbage Soup

Reviewed: Apr. 19, 2011
I've made this a few times and have found the best way was to chop everything up and throw it into the crockpot on low for about 8 hours. Instead of water and beef bouillon I substitute a 24oz can of tomato juice and add water as needed. I've also added carrots and celery for extra veggies and changed from pork sausage to leftover pork loin diced into pieces. Whatever I've added it takes well and makes a rich and flavorful soup that is great on cold, rainy days.

Spinach Cheese Pasta

Reviewed: Aug. 31, 2009
I love spinach and am always keen to try dishes that use it. I did make a few changes to suit my taste. I cooked a few slices of bacon and then sauted diced onion and doubled the garlic amount in the bacon grease. I added the spinach and heated it up. I also used rigatoni pasta as that was all I had. It was very tasty and made for a quick dinner!

Fresh Green Beans, Fennel, and Feta Cheese

Reviewed: Sep. 1, 2008
This was my first time eating fennel. Recipe is a great way to use it! I did add some sliced tomatos in the last step and they added a great color and taste. Not sure I will make this often as I don't usually have fresh green beans or fennel but definitely something for a special occasion.

Grilled Chicken and Pasta Salad

Reviewed: Jul. 14, 2008
Very versatile recipe. I used half of a leftover roasted chicken, egg noodles (the only pasta I had in the house!), diced roasted red peppers and some bacon that I cooked and crumbled. It was really great and the kids enjoyed being able to use there favorite salad dressings. It was even better the next day as lunch leftovers!

Chipotle Chicken Soup

Reviewed: Jan. 6, 2011
I love this soup and appreciate that it is so easily customizable. I have used leftover turkey breast in place of chicken, and a can of chicken broth instead of the bouillon and water. I also find this is a great soup to cook in the crock pot. Just toss everything in and come back in a few hours. My husband likes it a bit more stew like so the last few times I have used cornstarch tempered in the broth to thicken it up a bit. But great either way.

Ham 'n' Noodle Hot Dish

Reviewed: Sep. 23, 2009
Quite yummy. Was looking for a way to use the last of a ham leftover from Sunday dinner. Made a few changes based on what I had on hand. Used a whole bag of frozen mixed veggies in place of the peas, also added some diced celery and garlic to the mix. Used egg noodles and loved the topping. It was super quick and easy to make and my kids ranging from toddler to teenager loved it. Will definitely make again!

Best Guacamole

Reviewed: Sep. 1, 2008
Decent base recipe but why the olive oil? Seemed unecessary and only added fat and calories. Also sort of bland. If I served it the way it was written to my Hispanic friends they would laugh at me! To make it true guacamole I added finely diced jalapenos, onions, garlics, tomatos and cilantro. After an hour in the fridge it was perfect!

Sausage & White Bean Soup

Reviewed: Aug. 27, 2008
Very good recipe! Worked well in my slow cooker. I ended up using about 1 1/2 pounds of pork loin I had leftover from dinner the night before. Diced it up and added carrots, celery, onions, garlic and potatos. Lumpy pureed two cans of garbanzo beans and added with the broth. Also added two cans of black eyed peas. Cooked everything with some thyme, sage and rosemary in my slow cooker on low for 4 hours. It came out perfect and creamy. Everyone loved it and it was so nutrious and easy! Now a staple recipe in my house!

Wine and Dijon Marinated Pork Loin

Reviewed: Aug. 22, 2008
Pronounced as "Excellent" by my teenager. It turned out very moist and tender. I followed the recipe closely except I used a bit more yogurt and added tarragon and sage to the list of spices. Served with rice and veggies. Made for a yummy dinner!

Big Soft Ginger Cookies

Reviewed: Jan. 31, 2013
Wonderful cookies. So soft and chewy and they look store bought they are so pretty. For Christmas we rolled them in colored sugar and gave them as gifts to our neighbors. Very quick and easy to make! My whole family love them. A keeper for sure.

Vegetarian Chickpea Sandwich Filling

Reviewed: Jan. 6, 2011
Great basic recipe that takes customization well. I use about 1/4 cup diced green onion, add 1 tsp of garlic powder and also a dash of sesame chili oil. That really kicks it up a notch. Leave it in the fridge overnight to really blend the flavors and then this makes a great lunch spread on crackers, pita or even just by itself.

Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

Reviewed: Nov. 18, 2008
What a delicious dish! I have made this several times and it takes substitutions or additions very well. I have added pine nuts, mushroom, garlic, onions and replaced the Blue Cheese with Feta, added Oregano and Basil and also wrapped the bacon around the chicken and baked it instead of putting the bacon in the stuffing. Any combination I make has turned out well and this is my go to recipe for guest dinners. I can make it ahead of time and take it from the fridge to the oven when I get home from work! It always looks like it was difficult to make and my guests love it!

Cranberry-Pumpkin Cookies

Reviewed: Nov. 18, 2008
Super moist and very good. I have made these multiple times and each time they turn out great. Rarely do they last long as the kids/co-workers gobble them up! They also take additions well and I have added white chocolate morsels or different spices such as ginger or nutmeg. These cookies always stay soft and aren't too sweet. Excellent recipe!

Banana Banana Bread

Reviewed: Aug. 25, 2008
Came out nice and moist. I didn't have enough bananas so I added 3/4 cup unsweetened applesauce and a few spices (vanilla, ginger, cinnamon and nutmeg). Very flavorful and definitely will be my go to recipe to use up over ripe bananas.

Daria's Slow Cooker Beef Stroganoff

Reviewed: Aug. 20, 2008
Pretty good recipe. I had to make a few modifications but all in all it was fine. Kids ate it without complaint - which is always a good thing. I used one can of cream of chicken soup (all I had) and one can of cream of mushroom. I used canned mushrooms too. I mixed cooked egg noodles right into the crockpot and served it from the cooking bowl. Made for a quick dinner after sports practices.

Indian Chicken Curry II

Reviewed: Jun. 19, 2008
I made this for a pitch-in at work and it was a huge hit! I followed the suggestion of another poster and dry roasted the curry and other spices before adding the olive oil. It made a flavorful paste that coated my chicken nicely. I left out the sugar too. I put the seasoned chicken pieces, the yogurt milk mixture, the diced onions and a bag of lima beans in my slow cooker and cooked the whole thing on high for about 4 hours. It turned out perfect! This is something I will make again - at the request of my co-workers!

Turkey Salad

Reviewed: Nov. 26, 2012
Yum! Used leftover T-day turkey and swapped out 1/2 red onion for the green onion but otherwise followed the recipe. This spread was excellent and my kids enjoyed it on crackers as a snack and it was good on bread with tomato, lettuce and bacon slices. The only change I would make would be to add the red pepper with the mayo so that it would be chunkier and have a better texture - but that is just a personal preference! Otherwise this is a go to recipe for turkey leftovers.

Purple Plum Pie

Reviewed: Sep. 24, 2009
Great recipe. Decided to make it a cobbler and save on calories and fat. I have made this many times and like to add different fruits to the plum mixture. My favorite is dried cranberries - adds a tart kick to the sweetness. Have also used blueberries, cherries and golden raisins. Each was great! My neighbor has a prolific plum tree so this will be our go to favorite for years!
