Finnish Pulla

My sister makes this every Christmas. I finally got her to give me her recipe, and it is exactly as this one. Hers was in Finnish and our Dad had to translate it for us. I am making pulla right now as I type this. Wonderful !!

Pecan Pie

Excellent recipe ! I used the dark syrup in mine and it made a beautiful, dark rich pie. I will definately be making this again. Because this was for Christmas with guests, I took a spoon and turned all the pecans flat side down for better presentation once they floated to the top. I brought the whole pie to the table. If I was going to cut it before presenting, I wouldn't have bothered.

Hearty Vegetable Lasagna

We had friends over for Christmas Eve and my traditional meal is lasagna. However, since one of our friends is a vegetarian, I made this recipe instead of my tried and true. It was delicious !! Definately will make again. The only thing I added was some sliced zucchini. I didn't miss the meat at all. I had never used jarred sauce in my lasagna before, but it was good. I think simmering it with the veggies makes it pretty good. The only thing I think I will do different next time is not so much pasta. My regular recipe calls for only 8oz. This seemed to be alot of noodle. Maybe I will use about 3/4 of box. I might experiment with more/different veggies, too, just to try it out. All in all, though, a really good recipe and one I am glad I tried !

Southwestern Black Bean Stew

Love this recipe !! I did a couple of substitutions - I liked the suggestion of another reviewer, so I used salsa instead of tomato paste for a little zing. I also topped with Pepper Jack cheese instead of cheddar. I used chicken breast instead of ground beef. I just shredded it as it cooked and still used the taco seasonings. Whole family love it - will definately make this again and again !!

Rhubarb Strawberry Jam

I loved this jam - it was a huge hit with everyone who tried it. I read some reviews that said it was too sweet. I followed the recipe exactly and it was definately not overly sweet. I wonder if it has to do with your rhubarb or the region it is grown in. Alot of fruits, berries, etc, are much, much more tart here in far northern Minnesota than in the rest of the state, perhaps the rhubarb is, too. I also froze a jar of it and it froze wonderfully - did not change the texture at all. I am going to make 3 more batches to freeze.
