Simply delicious. I thought it looked liked way too many veggies once they were all cut up and ready to go in but they really cooked down.

Baked Haddock

Delicious!!! I put salt and pepper on both sides and drizzled olive oil over the fillets before putting on the lemon slices and used dried dill. Easy and so good.We didn't do the tartar sauce, it was perfect without it. It looked really pretty too!!!

Szechwan Shrimp

MMMM MMMM this one is yummy. We were also serving this to our toddler so I left out the red pepper flakes and it still had a very nice sweet & sour vibe. I used raw shrimp, a maple and agave syrup blend in place of the honey and threw in some sugar snaps when the shrimp were half done which added a really nice crunch, we served it over brown rice. I love how this can be made with pretty much condiments from the door of the fridge, you could make this every week and only have to buy a bag of shrimp.

Shrimp Scampi Bake

Delicious. First made the sauce with the mustard and didn't like it at all, it was very overpowering. Dumped it out and started over without the mustard and it was perfect. If your not a huge mustard person it would prob. be best to cut it way down or omit altogether. We had it over brown rice and it was really yummy.

Fast and Easy Tofu Lo-Mein

I really wanted to like this recipe but it really was a waste of tofu. I had my tofu nicely browned and crispy and put in the veggies and seasoning packets and it was quite dry and was hard to mix together, so I tried adding some pasta water and my tofu got soggy :~( then I mixed in the drained sticky noodles and it was even drier. All that aside it's also awfully unhealthy. Too bad!!

Artichoke Chicken

Wow is this ever good. I did follow another review and did the 1/2 C mayo and 1/4 C sour cream. It's wonderful reheated the next day for lunch. GREAT recipe!!!!

Summer Corn Salad

This is really good. I used sliced grape tomatoes, only half of a small red onion finely diced, dried basil (fresh would have been best)and red wine vinegar because I was out of white. I also only used half of the oil although some of my ears of corn were on the small side so maybe I just had less corn. This really is a great summer salad because the corn and tomatoes are at their best!!!

Herald's Impossibly Easy Cheeseburger Pie

This was good. It's not the type of meal that I would make for company coming over. I was making cupcakes for a party at the same time. It's the "I need to make something good yet easy and quick for dinner" type of recipe. I used a ripe garden tomato instead of the italian diced tomatos like I planned and that turned out very well. The baking mix topping while mixing it together did seem awfully thin to me so I just kept adding handfuls till it was a nice thickish consistancy. My husband said it tasted like a cheeseburger on a biscuit, it does definitly dress up the popular "off the box" recipe! All in all it was a good dinner and I'll definitly be having the leftovers for lunch tomorrow!!!

Baked Zucchini Chips

These were okay, they didn't get crispy like I thought they would and I kept them in the oven an extra 5 minutes, they had a soft breadcrumb like taste. Maybe dipping in egg not egg white would have been better!

Lemon Mushroom Herb Chicken

The sauce was VERY good, however after I cooked the chicken and added the sauce ingredients the breading started to fall off the chicken so there were peices of breading floating around in the sauce. It did taste good, but I would have preferred the breading to stay on the chicken.

Spinach Chicken Parmesan

This was delicious!!! I used a yellow onion instead of green onions, and also added two cloves of garlic along with the onion. Instead of butter I used I Can't Believe It's Not Butter Light. This tasted like it was a very fattening dish, yet with the skim milk and the ICBINB I think it was pretty healthy. I was also concerned with the chicken drying out, but it was very moist and juicy. Definitely a keeper.

Asian Coleslaw Light

I really loved this coleslaw. The noodles do get soft, but I enjoyed the different textures of the crunchy cabbage and the soft noodles. I didn't have Splenda so I used a Sweet n' Low packet and just sprinkled it, stirred, and tasted until it was sweet enough for my taste. For some reason the grocery store was out of coleslaw mix so I just shredded a small head of cabbage and carrots, and I omitted the sunflower seeds because I didn't have them, but I'm sure they would have added another element of delicious crunch. I think I'll be making this on a weekly basis, we had it with stir fry but it would make a great snacking salad too! Thank you so much!
