Moroccan Mashed Potatoes

Crispy Fish Fillets

Yummy recipe, quick prep. Unfortunately I didn't have potato flakes so I used Italian bread crumbs. I also added wasabi into the mix. Ended up not going very well together :P But still good. Next time maybe I'll use panko breadcrumbs. and replace the mustard completely w/wasabi. Then I can dip it in soy sauce.

Caramel Apple Pork Chops

Maple Salmon

Excellent! I wonder how much better the salmon would have been if I marinated it longer. I was afraid that this would have been too sweet but I found that I couldn't get enough of the sauce :)

Crispy Chicken Wontons

This is my first time cooking w/wonton wrappers, they were good! Fairly simple to make, but wrapping the wontons was a little tedious. I didn't use water chestnuts or carrots. Instead I used garlic scallions and leeks in the mix since that's what I had. I used a food processor to mince the chicken and that worked great.

Sweet and Sour Sauce I

Simple Whole Wheat Bread

I'm a novice bread baker and this recipe was simple and yielded delicious results! There's nothing as good as home made bread. Chewy, moist, flavorful. I liked this better than the "Amish White Bread" recipe that I tried a couple of months ago.

Grilled Citrus Tuna

First time making tuna steaks, I thought that the marinade was pretty good, although next time I'll probably let it sit overnight since I could only really taste the citrus flavor along the edges of the steak. I used a foreman grill and served with couscous & corn.

Ginger-Braised Black Cod

Not as good as what I remembered having in the restaurant, but still a fresh take on what I'm used to as plain old cod. It was a little sweet and I'm sure that my ingredients weren't as good, maybe next time I'll use higher quality sake and less sugar.

Rigatoni with squash & prawns

Pretty good, the flavors all go very well together. I used cooked tiger shrimp instead of the prawns. Also used garlic chives instead of cloves. Used skim instead of whole milk but the sauce still stuck to the pasta. I wasn't too keen on the reheated leftovers since there was too much of a fishy smell/flavor on the pasta, but that's just because I'm anal.

Roast Chicken with Rosemary

Yummy! I'm very excited because this is the first time I've cooked a whole chicken, and it came out great. I took the advice of others and stuffed with garlic and squeezed lemon peels along with the rosemary and onion. I could really taste the flavors in the meat. I also rubbed lemon, olive oil, salt & pepper on the outside of the chicken before roasting.

Baby Carrots with Dill Butter

A nice complimentary side dish to the roast chicken I made. I boiled the carrots in chicken stock and used dried dill instead of fresh. This was a fresh take on a dish I usually just boil and toss with butter.

Italian-Style Swiss Chard

I thought this was pretty appetizing. I served it over pasta with regular marinara sauce--the swiss chard & garlic made a simple pasta dish "fancy", as my boyfriend put it :)

Rosemary Potato Frittata

1st time making a frittata, fun! It came out fluffy and savory. I'm not sure why but I had to leave it in the oven for almost twice as long as the recipe called for. The leftovers tasted even better over the next few days heated up on the stove.

Connie's Zucchini "Crab" Cakes

Unique and tasty solution for all that extra summer squash! I squeezed out the water from the zucchini between a few paper towels before combining it with the rest of the ingredients, but the patty mixture was still a bit hard to keep together. They didn't taste like crab to me but my boyfriend & I thought they were delicious nonetheless. Next time I'll add some crushed red pepper for a little heat. Second time making this, I added a couple of grated carrots. Came out very good! 3rd time. Baked w/no flour. 10 mins per side at 400. Might decrease the temp next time & coop for longer. Also will try leaving out the butter. Used panko bread crumbs.
