Baked Potato with Mushrooms

Yummy!! This was perfect! I did just go ahead and microwave it the whole time...I didn't want to heat up my house with the oven. Yogurt is such a good substitute for sour cream!!!

These were good! I think I overworked my dough some because I had a lot of trouble to get them to flatten, but I made it work. Used this for just plain ol' tacos!

These were good!! I just think the only thing was the cream cheese mix could have used a little garlic powder, salt and pepper. Baked up nicely :)

Delicious!! I added the carrots in early when I sauteed the onions and mushrooms because we like them soft. The green beans were good in this as well!

Beef Fajita Salad

My husband is just getting over being sick and we are sick of soup! So something light, but filling was what we needed! The only thing was that I had no black olives, but I did have green so I used those , and I threw in some yellow chopped tomatoes with the red. That dressing is fantastic too!

Some of the best! I did as others and did the whole 2 eggs and 2 cups of flour. I also was short on chocolate chips so I also added 1/2 cup butterscotch chips. These came out perfect!

Scrambled Eggs Done Right

I really enjoyed this way of making eggs! I didn't get a strong mayo flavor, but it did change the flavor of the eggs a bit, and I liked it! I served these on biscuits with bacon and cheese, yummy!

Pasta Primavera with Italian Turkey Sausage

I wouldn't call this gourmet but for something easy and quick to throw together, we really enjoyed it! I tasted it without the pepper flakes and then with and the red pepper is what makes this dish. Very good for a busy mom!

These had good flavor, but the only thing that kept coming to me as I was eating them, was that they were a little dry. Simple to make though, and they did all get eaten. Maybe a little more cheese next time...

Cobb Salad

I haven't had a cob salad since I was living at home with my parents! My mom made them often. Pretty much anything goes with a cobb salad...made a couple changes to this one, just did red onion instead of the green, feta instead of the blue cheese, and added some sliced pepperoncini's. Everybody used their favorite salad dressings and dinner was enjoyed very much! Easy and quick, especially when you have leftover chicken!

Southwest Black Bean Chicken Soup

This is delicious! I did make a couple changes for what I had on hand. I used chopped chicken breast, kidney beans instead of black beans, and since I have a ton of tomatoes, used those instead of canned. Very easy, simple, and tasty!

Easy Batter Fruit Cobbler

Boy was this good! This will be our go to cobbler for now on! I used strawberries and blueberries. I doubled the recipe which worked great, used a 9x13 dish. I did add a little cinnamon to the sugar sprinkled on top. Yummy! Definitely serve this with ice cream!

Potato Squash Cakes

I thought these were great! I didn't think they were bland at all as some of the other reviewers said...probably just needed more salt! I did add a little bit of cayenne cause we like spice! Served this with a sauce I made of horseradish, mayo, cayenne and S&P.

Mom's Beef Shish Kabobs

The flavor is good, but quite strong. I would go with just marinating and no basting, or no marinating and only basting. The veggie skewers (which I did separate from the meat), I basted a couple times through grilling and they were perfect!
