Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

Wasn't bad. I would definitely recommend using fresh spinach instead of frozen. I really thought the frozen spinach gave a chewy texture. I did like the blue cheese but it is a little too overpowering and I love blue cheese. I would mix it with either feta or mozzarella.

Fabulous. I marinated it overnight. Copied everything to a T except I use panko breadcrumbs instead of regular. Easy to make and delicious quick meal.

Rempel Family Meatloaf

Not a fan! I thought I would copy the recipe exactly but did use 1 pound ground beef & 1/2 pound of ground pork. The meatloaf was salty and was a little mushy. Won't make this again

Pico de Gallo Chicken Quesadillas

Tasted pretty good. The only thing I did was baked it instead of frying it on skillet. It came out great, but I think it would've tasted better if it was made on the skillet. I didn't make the sauce, but I topped it with homemade guacamole, sour cream & salsa. Yum

Pot Stickers Traditional

Taste like the authentic pot stickers that I grew up with when I was a kid. The only change i made was added a little sherry to it. I also wrapped it with potsticker (round) wrappers rather than wonton wrappers. I made a dip, using 2 Tb soy sauce, 2 Tb water, 1 Tb rice wine vinegar, green onions, ginger & sesame oil. Really good! I would fry the bottoms of the pot stickers til it browns on bottom, throw in about 3-4 Tb of water, put lid on and it's ready when the water are all absorbed. I will try it next time boiling it, like I remembered when I was a kid.

It was a little too sweet for my taste. So I would cut down on the honey, since teriyaki sauce is made with sugar in it. The five spice powder is a MUST have. Gave the chicken an aromatic smell.

Fried Rice with Cilantro

Not bad. A nice change from the typical Chinese fried rice. It has a slight sweet taste to it and reminds me of Thai fried rice alot. I dig the flavors of the baail in the rice. Worth a try!

Pesto Cream Sauce

Delicious! Loved it. So rich and creamy. The only change I made was use 1 cup or milk and 1 cup of whipped cream for a thicker texture. Do try this. So easy to make and u could use any kind of meat! (Well..besides ground beef)

My Crab Cakes

It was OK..I guess there is something about the taste of can crabmeat. I did make a mistake of double breadcrumbing it. And I also baked it. Maybe next time, I will try it with more crabmeat and frying it, rather than baking it.

Chicken Breasts with Herb Basting Sauce

Fantastic!!! I used bone in and skinless chicken breast. I marinated it in the olive oil/herb for about 1 1/2 hours. Baked at at 425 for about 30 minutes and took the foil off and baked it for another 10-15 minutes. Keep basting for moist chicken. Great combination of spices and smelled delicious while it is cooking

Real simple dish with tons of flavors!! Worth a try and the pork chops were SO tender. I did thicken the sauce and added some onions to top the pork chops with.

Chicken Enchiladas I

It was great and easy to make. I did substitute the tomato sauce with salsa and topped the rolled enchiladas with mild enchilada sauce. I also poached my chicken in chicken broth and herbs and shredded it when cooled. I served it with shredded lettuce on the side and sour cream. Soo delicious and so fulfilling!!

Colleen's Slow Cooker Jambalaya

I dont make alot of cajun food, but I do enjoy the spices in cajun/creole cooking. I made this recipe as instructed. It smells delicious while it was cooking. I took other reviewers suggestion to cook the rice in its original juice last 1/2 hour of cooking (so it isn't so runny). But I was just unimpressed with the flavors. I am not sure what spice overpowered the dish, but I just didn't like it. My husband ate it and felt the same way. Won't be making this again!

Angel Hair with Feta and Sun-Dried Tomatoes

No a fan! I have to say, I was really looking forward to this quick dish. I cooked it with chicken broth as suggested by other reviewers, and added basil. But the rest, I copied to a "T". The pasta was dry and the combination of cheeses had potential for a gourmet taste, but it really lack luster! Probably not making this again.
