This was good, but it wasn't spectacular. It could use a little tweaking - there needs to be something to zest it up a bit. It tasted a little on the bland side, but it didn't keep me from clearing my plate.

Slow Cooker Chicken Taco Soup

This dish was incredible! The minute I walked in the door, I could smell the aroma of the soup oozing out of our kitchen. It tasted even better than it smelled. An exceptional recipe - as is!

Risotto with Tomato, Corn and Basil

This risotto was incredible! The taste even tops the risotto I always order at a great Italian restaurant close to home. The only downside is it makes my husband and I fight over who gets to take the left overs to work the next day. I definitely recommend trying this recipe!

Amazing Southwest Cilantro Lime Mango Grilled Chicken Sandwiches

This was AWESOME!!! Honestly, I'm not a huge fan of mango, but it was just the perfect sweetness to offset the spices that the chicken was marinated in. It did take a while to make, but it was totally worth it! And actually, if I had thought ahead and done the marinade the night before, it probably would've been a snap. That's what I'll do next time (because I'll definitely be making this recipe again)!

Fried Okra

I love fried okra, but coating it in cornmeal made it so gritty and crunchy I couldn't eat it plain. I had to put a sauce (ketsup) on it just so I could swallow it. Next time I'm going to use corn flour and hope that does the trick.

Asian Lettuce Wraps

This recipe was awesome! I had a hard time locating some of the items at the store the first time I made this, but it was well worth the hunt. I never could find dark sesame oil, so I substituted a sesame garlic sauce and it still tasted great. I also used Morning Star Meatless Crumbles instead of beef, and no one would have ever known the difference. Thank you for the recipe! It has become a staple in our house. :)

Lemon Green Beans with Walnuts

This wasn't the best green bean recipe I've ever tried. I think it was the walnuts combined with lemon juice that wasn't quite tasting right. Next time, I'll try almonds instead.

This is the best recipe I've found for Sweet and Sour Chicken, but it just seemed like it took forever to make! I know I'll make it again...but next time I might recruit some help so it goes a little faster.

Chewy Coconut Cookies

These cookies were absolutely perfect following the recipe as is. They are great freezer cookies, since they stay chewy even when they're cold. I think they may have even topped my favorites list as far as cookies go. :)

Zucchini Parmigiana

I have never been a big fan of zucchini, but this dish was absolutely delicious! My husband raved about it and was so happy that I made extras so he could take it to work with him for lunch. The only downside for me is that it takes quite a long time to make. It's easy, it just takes time. But the taste far outweighs any prep time that goes into making it. Definitely a recipe I'll make again!
