Eggplant Sandwiches

This recipe is amazing! These also make good appetizers if you use bruschetta-size toast or slice up a sourdough or french baguette! The fresher the ingredients, the better. Good on ciabatta rolls, too. The sandwich is good for lunch or for a lighter, refreshing dinner.

Chewy Peanut Butter Chocolate Chip Cookies

Delicious, and perfectly moist and chewy! I halved the chocolate chips and there were still plenty. Not as peanut-buttery as they could have been.

Honey Baked Chicken II

This was delicious! I altered the recipe based on other reviewers' comments, using 1/2c honey, 1/3c mustard & 1/4c butter, no salt, 2t curry powder and 1t cayenne powder. I turned chicken ~3 times, keeping the dish covered for the first 30 minutes. Next time I'd bake it for a little less time so the chicken stays more moist. Served over basmati rice is perfect!

Roasted Winter Squash Seeds

These were delicious! I used seeds from a spaghetti squash, and had to scale down the recipe because the squash only yielded ~1/4 c seeds. Definitely will make again!

Spicy Persimmon Chutney

I quadrupled this recipe so I could can it and give as holiday gifts. Glad the previous reviewers suggested using less vinegar; I used 1/2 of what was called for, substituting other 1/2 for water. I used one large anaheim pepper, honey instead of sugar, and used both lemon & lime juice/zest. Delicious, can't wait to try with lamb chops! Also good if added to creamy base (i.e. butternut) and turned into soup.
