Batter White Bread

Reviewed: Jul. 21, 2008
I was disappointed with this bread. The texture looks great but even when sliced thick, falls apart. Like a cake, it also fell as it cooled. Flavor is decent but I think I'll stick with kneaded bread.

Best Ziti Ever

Reviewed: Sep. 9, 2008
This is pretty good but, as usual, I made substitutions. I didn't have sausage so used hamburger, substituted cottage cheese in lieu of ricotta cheese and used only one jar of Ragu sauce, which made it too moist, even then. Also, added some minced and sauted onions and garlic. I'll have more than enough to share with several of my neighbors who aren't vegans and some to freeze.

Pecan Sweet Potato Casserole

Reviewed: Nov. 6, 2008
I tasted this at a Thanksgiving dinner put on by mys son's church last year. The chef was a retired restaurant owner and her sweet potatoes were the best I'd ever tasted! She was supposed to give her recipe to my daughter-in-law but didn't. When I read this recipe I felt it was as close to hers as I cold find. I substituted Cinnamon Vanilla Coffee Mate for the milk, added two teaspoons cinnamon and- it was beyond perfect. I'll make this often, believe me!

Simple Whole Wheat Bread

Reviewed: Nov. 15, 2008
It truly is the best but, once, I put the yeast into water that was too hot and ended up with bricks instead of bread. Every other time, the bread came out perfect, raised nice and scented my home beautifully! It even sliced nice - thick or thin slices were perfect and I couldn't ask for better texture.

Almost No Fat Banana Bread

Reviewed: Jan. 23, 2009
I liked this recipe. It's definitely not too sweet and because I can't chew nuts right now, I dumped 5 handfuls of walnuts into the blender while I peureed the bananas. That added to the flavor quite nicely. Next time, I'll double the recipe so I can send a loaf home with my granddaughters when they stop by after school. They like Grandmas baking and I like to give hem something different each time they come to my home.

Tasty Spaghetti Sauce

Reviewed: Jan. 25, 2009
This sounds like my own recipe but the Italian Mother of my daughter's godfather helped me fine-tune it by adding just a shake of powdered cloves and about 2 shakes of cinnamon. My ex always said it was the best he'd ever tasted - even asked me to teach the recipe to his latest wife! No way, Jose!

Rhubarb Crisp

Reviewed: May 30, 2009
I really liked this version. It tastes like the recipe I used to make30 years ago but didn't make it for a long time because I lost my recipe in a move. I did add about 2 tsp. of cinnamon which gave it that flavor I remembered so well. In all, with a big scoop of vanilla ice cream, it's very special!

Orange Cream Cookie Mix

Reviewed: Oct. 5, 2009
I did not care for these. They're expensive to make and when you consider that they are too sweet and tart to eat, the cost is prohibitive. I followed the direction to a tee but the batter was totally dry and crumbly, the temperature listed was too hot and the first pan burned to a crisp. I reduced the heat to 350 and the time to 10 minutes which gave a better texture cookie, but still way to sweet to put in a jar and give for Xmas. Never again.

Swiss Chicken Casserole II

Reviewed: Oct. 5, 2009
I think, if I make this again, I'll use cream of celery or mushroom soup, maybe more diced celery and onion and diced garlic. The chicken soup makes it too rich. The swiss cheese is an interesting change from cheddar - lighter. Glad I only made enough for two individual servings (two meals for me.)

Sweetened Condensed Milk

Reviewed: May 21, 2010
One reviewer said this burned while cooking and, even though I stirred it constantly while it cooked, it definitely burned for me too. I made a second batch in the microwave oven and timed and watched it very carefully so it wouldn't boil over. I zapped for 1 min., stirred zapped for 30 seconds, twice, stirred, then continued to zap until it boiled almost to the rim for 15 seconds. I did this for 5 times, stirring after each. Finally, I put it into my Bullet and blended it for about 50 seconds till it was totally smooth and exactly like the canned version. I'll make it this way from now on - it tastes like what I always bought before but is much cheaper to make. It actually takes less time to make it this way, too!

Grilled Cheese and Peanut Butter Sandwich

Reviewed: Sep. 3, 2010
I'm not a fan of beef so this combo has been my stand-in for over 60 years. Also llike to add tomatoes, or deviled ham, or bacon. Both cheese AND peanut butter blend with everything, so why not experiment? Try it, you'll like it!!

Didn't like it - too chunky even after pureeing most of it.

Simple Peanut Butter and Tomato Sandwich

Reviewed: Jan. 15, 2013
I've been making this sandwich for nearly 70 years and have always loved it Peanut butter and tomatoes are so versatile, they 'go with' everything. I especially like the combo with bacon, deviled ham and even onions. It's a special treat with cheese as a grilled sandwich. So much flavor!
