Chicken Cordon Bleu II

I made this for my wife and guests on Valentine's Day. It was amazing and very easy to prepare. The sauce was a highlight and you definitely need to make extra. Not recommended for anyone watching their calories but for a special occasion it is ideal.

Morgan's Waldorf Salad

This was the lead in to very successful Valentine's Day dinner for my wife. I used a Macintosh apple because I had some, a Gala apple and a Bosch Pear along with a handful of grapes, sliced in half. Served it on a leaf of lettuce in high desert dishes. I am not a fan of fruit in my salad but this Waldorf is a winner. My wife has asked me to make for a dinner party we are having next week, which is probably the best review you can get.

Moussaka

My wife loves Mousaka. I spent time in Cyprus and she had the best Mousaka ever in a small restaurant across the road from our hotel. This recipe comes as close as possible to that experience. I made enough for 6 people using this recipe. But, I did not need three eggplants. I found two medium size were plenty. Get them black, soft and lightweight for the best. I used a thin potato base and roasted the potatoes in the oven with the prepared eggplant - 10 minutes each side at 350. I lightly sprayed with Olive Oil when I first put them in and when I turned them. I used three egg whites in the Bachemal Sauce (which my daughter insists I can, therefore, not call it Bachemal Sauce. I did up the meat sauce the night before and put it in the refrigerator overnight. I mixed in the three egg yolks. I didn't use as much Parmesan as the recipe calls for but did a liberal sprinkling of Parmesan on the meat layer, on the top eggplant layer and the sauce layer. The whole experience took me a good four hours. I am sure it will be quicker the next time but the rave reviews I got was worth the effort. And, in that four hours there was a lot of down time waiting for things to happen. My wife retired from the kitchen last year and handed me the pots and pans for my enjoyment. This recipe just made my reputation.

Eggplant Parmesan II

Great dish. The first time I made it and everyone could not get enough. I dipped the eggplant first and then baked it for ten minutes on each side. Then I did three layers and made sure there was a layer of sauce on top. Salting the eggplant for 30 minutes and then soaking them in water was essential. Dry the slices well before baking.

Black Bean Vegetable Soup

Cooked it as suggested for a guest who was vegetarian and it was a hit. I will make it again even when there are no vegetarians in the house. Put two dollops of natural yogurt on top just before serving and it really made the soup creamy.

Chocolate Cream Pie

A great recipe that you will want to repeat. Especially good for those who do not prefer a really sweet dessert. We have made it three or four times and it is easy to prepare and always comes out perfect.

Round Steak Sauerbraten

Sauce was very runny. Needed to remove meat and add Corn Starch to thicken sauce before serving. But, this is a good recipe which I will make again. Family recipe - not for company yet.

Quick and Easy Yorkshire Pudding

My grandmother taught me how to make Yorkshire Pudding more than 50 years ago. She did it the old fashioned way. First, you need the over at 425 not 350. I use a level one cup of flour which is probably about 1 1/4 C. I add two eggs and mix with a fork until the all the flour is touched by some egg. Then you add milk, stirring only with a normal fork (my Mom's rule) until you get the consistency right. It should be runny and should not be too think. It should sort of flow off the fork. Cover and let it sit on the counter for 30 minutes. Put a tsp of oil in the bottom of a muffin tin. One tsp for each. Put tin in overn until smoke comes off the muffic tin. Take out of oven and distribute pudding mix evenly. Place in over for 22 minutes of until top is slightly brown. These will not be the puffed up puddings that are so popular but the Olde English puddings. Make enough to serve some as dessert with white sugar. Awesome.

Vegetarian Korma

I followed the recipe and was really disappointed with the flavor and the lack of sauce. The dish ended up dry and fairly bland in terms of taste. It was spicy enough but lacked flavor.
