Potato Squash Casserole

Great recipe. Like another reviewer I used morning star farms fake meat instead of the sausage. It makes a very tasty vegetarian meal this way. One tip I learned from a review on another butternut squash recipe: to make it easier to cut and peel the squash fork your squash all over and place it on a cookie sheet in the oven at around 350 or so while you prep the other ingredients. When you are ready to cut the butternut squash take it out and I usually use hot pads to hold it while I peel it or you can let it cool some. It is just soft enough to make peeling and cutting way easier than usual. it doesn't take long. Even 10 min will help make it softer. The longer you leave it the softer it will get.

Yummy Pink Punch

Great Punch. I served it at my sons Dr. Seuss b-day party. It made great Pink Ink Drink. Like several other reviewers I could not find cranberry ginger ale. I used Cranberry juice and regular ginger ale and it still tasted great.

Three Cheese Spaghetti Pie

As many other reviewers stated I didn't think the crust made sense so I didn't use one. I doubled the recipe in a 9x13 pan and used spiral whole wheat noodles. It turned out great and is a nice change from regular spaghetti.

Double Layer Chocolate Peanut Butter Pie

Very Rich!!!. I made the recipe as is with just a few small changes. I made this in a springform pan with an crushed oreo base (I crush oreo's and add butter to help them stick together). Next I spread on the peanut butter layer. I forgot to add the sugar in this layer but I didn't misss it. I then stuck an oreo half in the peanut butter layer all the way around the inside edge of my springform pan. Next I layered on the chocolate layer. I used whole milk and my pudding mix was REALLY thick. I stuck these layers in the freezer for about 30min to allow everything to set well. I topped the pie with whipped cream and sprinkled crushed oreo's on top. This made for a very rich dessert with a nice presentation. I didn't have 4hours to let this sit in the fridge before serving it so I put it in the freezer for about an hour and it setup nicely.

Simple Sweet and Spicy Chicken Wraps

So good I made this twice in one day! I made this for lunch today and I followed the recipe exactly except I downsized it to a portion for one. I liked it so much I decided to make it for our dinner with one major change. I replaced the chicken with FISH. This recipe made great fish tacos!!! I added some avocado and cheddar cheese on top and served it in corn tortillas. AWWWESOME (in a sing song voice). In the fish version I cut the cayenne pepper in half since I was planning on feeding it to my 9mth old. It still had a nice bite but it was not as hot as the original. My husband and 9mth old both really enjoyed it.

Quick Quiche

Great easy Quiche recipe. I made several batches of this with slightly different ingredients (salsa in some, veggies in some, some with different cheeses) for a dinner party and it was a big hit. Instead of one large Quiche I made it in muffin pans. Just be sure to grease the muffin pan or it will stick. I even made extra that I froze so my husband has a quick breakfast option. I will be making this again and again!! Try this, you will not miss the crust.

Chicken Spaghetti Casserole I

MMMMMmmmmm! I searched for a chicken spaghetti that did not use a big block of processed cheese and this fit the bill. I did not have pimento peppers so I used a can of tomatos with green chiles. My husband loves to have lots of veggies in every dish so I added mushrooms and fresh spinach. I've even made this with wheat noodles and tuna instead of chicken. Very tasty dish. I did feel like this needed garlic so I added a dash of garlic powder as I mixed everything up.

Chicken Asparagus Roll-Ups

very tasty. I used smaller chicken breasts and had more than enough sauce to coat the inside and out side of the chicken breasts very generously. Next time if I use smaller chicken breast again I will cut down on the amount of sauce I make.

Southwestern Chicken Lasagna

Great twist on Lasagana. It is a great basic recipie that you can add to. I have fixed it twice once with chicken and once with ground turkey. The second time I added lots of veggies (corn, mushrooms, broccoli, spinach) too. It was great both ways. I have also added cottage cheese and or ricotta depending on what I had on hand. Great lasagna with just the right amount of bite. I will be making this often.

Fruity Fun Skewers

I used grapes, pineapple, strawberries, mango, and Kiwi for very colorful skewers. I assembled the finished skewers in an easter basket garnished with fresh flowers for a super cute display. I used floral foam to stick my skewers in and it helped keep my flowers looking fresh. I assembled the whole thing the night before and it kept well in the fridge for the night. Thanks for a great idea we can easily personalize.
